1 lb ground beef
1 onion, chopped fine
1 garlic clove, minced
1/4 teaspoon oregano
2 tablespoons chili powder
1 (10 ounce) bag corn chips
2 ounces cheddar cheese (grated)
1 (15 ounce) can tomato sauce
15 ounces kidney beans or 15 ounces chili beans, with liquid

Steps:

  • Brown ground beef, onion and garlic.
  • Stir in tomato sauce, oregano and chili powder.
  • Grease a 1 ½ qt casserole.
  • Alternate layers of beans, meat mixture and corn chips; end with corn chips.
  • Bake covered at 350°F for 45 minutes. Uncover and bake 15 minutes.
  • Before serving garnish with shredded lettuce, chopped tomatoes and grated cheese.

1 tbsp olive oil
500g padron peppers

Steps:

  • Heat the olive oil in a large frying pan over a high heat. Fry the peppers, stirring frequently, for 5 mins until blistered and wilted. The peppers should be soft and slightly charred.
  • Transfer the peppers to a serving plate and season with some sea salt. Serve with dips or as part of a tapas spread.
