These bring back good childhood memories, and they are a good change from regular chocolate chip cookies. Great for any occasion.

Ingredients

3 egg whites
1 cup white sugar
½ teaspoon distilled white vinegar
½ teaspoon vanilla extract
1 pinch salt
2 cups semisweet chocolate chips

Steps:

Preheat oven to 300 degrees F (150 degrees C). Grease baking sheets or line them with parchment paper.
In a medium bowl, whip egg whites to soft peaks. Gradually add the sugar, vinegar and vanilla while whipping to stiff peaks. Fold in chocolate chips. Drop by spoonfuls onto the prepared cookie sheets.
Bake for 20 to 25 minutes in the preheated oven, until cookies are dry.

Ingredients

1 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
1 large egg, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup quick-cooking oats
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup canned pumpkin
1-1/2 cups semisweet chocolate chips

Steps:

In a bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in egg and vanilla. Combine the flour, oats, baking soda and cinnamon; stir into creamed mixture alternately with pumpkin. Fold in chocolate chips. , Drop by tablespoonfuls onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until lightly browned. Remove to wire racks to cool.
