Chocolate-Dipped Macaroons Recipe: How to Make It image

These macaroons have got a great homemade feel to them. The chocolate and coconut combination make them a very rich treat that everyone seems to love. --Joylyn Trickel

Yield 5 dozen.

Number Of Ingredients 6

5 large egg whites
1/2 teaspoon vanilla extract
1-1/3 cups sugar
4 cups sweetened shredded coconut, toasted
3/4 cup ground almonds
12 ounces bittersweet or semisweet chocolate, melted

Steps:

  • Place egg whites in a large bowl; let stand at room temperature 30 minutes. Preheat oven to 275°., Add vanilla to egg whites; beat on medium speed until soft peaks form. Gradually add sugar, about 2 tablespoons at a time, beating on high until stiff glossy peaks form and sugar is dissolved. Gradually fold in coconut and almonds, about 1/2 cup at a time., Drop mixture by rounded tablespoonfuls onto parchment paper-lined baking sheets, 2 in. apart. Bake until firm to the touch, about 25 minutes. Remove to wire racks to cool completely., Dip bottoms of cookies in melted chocolate; allow excess to drip off. Place on waxed paper-lined baking sheets. Refrigerate 1 hour or until set. Store in airtight containers.

Macaroon cookies dipped in chocolate!! I had a lot of coconut left over from a previous recipe and I had to use this up, and thought what could I make…. Then it occured to me “Chocolate Dipped Macaroon Cookies”!! These cookies turned out wonderful and moist. If you like the taste of coconut you’ll love these moist little gems. These are full of coconut flavor with that hint of chocolate. This macaroon cookie recipe only takes a few ingredients and a short time in the oven.This is another one of my favorites.

Number Of Ingredients 8

Macaroon Cookie Ingredients:
1/3 cup flour
2 1/2 cup shredded coconut
2/3 cup sweetened condensed milk
1/8 teaspoon salt
1 teaspoon vanilla
chocolate bark ( for dipping )

Steps:

  • Preheat oven to 350 degrees and grease a cookie sheet. In a mixing bowl, stir together flour and coconut. Mix in sweetened condensed milk, salt, and vanilla until a thick batter is formed. Drop balls of dough onto cookie sheet. Bake for 15-20 minutes, or until bottoms are lightly browned and peaks are lightly browned. Melt chocolate bark in microwave and drizzle over cooled cookies. You may also dip them in the chocolate sauce.
