10 slices whole wheat bread, or your favorite bread

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Using tongs, place bread slices directly on oven racks. Leave in oven until hard and golden brown, about 30 minutes; darker if you prefer. Remove and cool on wire rack.
  • Crumble slices into a large bowl until reduced to fine crumbs, or place in bowl of food processor and process until fine.

1 medium onion
3 garlic cloves
1 green chili
A handful of parsley
A handful of cilantro
1 tbp of Black pepper ground
1 tsp of dried oregano
1 tbsp of mustard
1 tbsp of ketchup
1½ tsp of salt
1 kg of ground beef, 9% fat
¼ cup of full-fat milk
2 tbsp of all-purpose wheat flour
2 tbsp of cornstarch
1 egg yolk
¾ cup of ketchup
2 tbsp of sugar
2 tbsp of Worcestershire sauce
1 tbsp of vinegar
1 tsp of black pepper

Steps:

  • To begin with, preheat your oven to 360 degrees Fahrenheit.
  • Grease your 11-inch meatloaf pan with a thin layer of butter or oil.
  • Peel and chop the garlic, onion, green chili and any other vegetables.
  • Now you can finely chop the cilantro, parsley and pepper ground.
  • Get a large mixing bowl and add the ground beef, chopped herbs and vegetables, oregano, mustard, ketchup, salt and pepper. Mix all of the ingredients together until fully combined.
  • In another bowl, mix together the cornstarch and wheat flour. When combined, pour this mixture over the meat.
  • Add the egg yolk to the mixture and begin combining the meat mixture with your hands. Remember to wash your hands afterwards.
  • Add the mixture into your greased meatloaf pan and push it down until it is laying flat in the tray.
  • To make the sauce, mix all of the ingredients together and place 3 to 4 tablespoons onto the surface of your meatloaf.
  • Use aluminum foil to cover your meatloaf pan and cook in the oven for 30 minutes. Remove from the oven and add the remainder of the sauce on top of your meatloaf. Then place back into the oven for 15 minutes.
  • Remove from the oven and allow to cool for a minimum of 20 minutes before tucking in.

Bread a few pieces of chicken at a time by dredging them with flour, then quickly dunking them in the egg mixture, then rolling them in the breadcrumbs until they're coated. Shake off the excess and place them on a plate or pan as you bread the rest. In a large nonstick skillet over medium heat (place the skillet on the backburner!), heat 1 1/2 to 2 inches of vegetable oil over medium-low to medium heat. (You want it to be hot enough to sizzle gently when you add the chicken, but not so hot that it browns too quickly.) Carefully drop in 8 to 10 pieces of chicken and use metal tongs to spread them out to give them room. Let them fry on the first side for a minute or so, then carefully turn them over to brown on the other side. The chicken should cook until the breadcrumbs are deep golden brown, about 2 to 3 minutes total; if the chicken pieces are small, this should be enough time for the chicken to cook through. Remove the chicken to a paper towel lined plate and repeat with the rest of the chicken until it's all fried. Serve warm with ketchup and/or mustard!

    1. Fry the bacon in a pan on a medium heat with a tiny drizzle of olive oil, until golden and crisp, then remove.
    2. For the butter, peel the garlic, then finely chop with the parsley leaves and mix into the softened butter with the cayenne. Firm up in the fridge.
    3. Working one-by-one on a board, stuff the chicken breasts. To do this, start by pulling back the loose fillet on the back of the breast – put your knife in the opposite direction and slice to create a long pocket (for extra guidance, watch the how-to video below).
    4. Open the pocket up with your fingers, cut the chilled butter into four and push one piece into the pocket, then crumble in a rasher of crispy bacon. Fold and seal back the chicken, completely covering the butter and giving you a nice neat parcel. Repeat with the 3 remaining breasts.
    5. Preheat the oven to 180°C/350°F/gas 4.
    6. Place the flour in one shallow bowl, whisk the eggs in another, and put the breadcrumbs and a pinch of seasoning into a third. Evenly coat each chicken breast in flour, then beaten egg, letting any excess drip off, and finally, turn them in the breadcrumbs, patting them on until evenly coated.
    7. Shallow-fry in 2cm of sunflower oil on a medium to high heat for a couple of minutes on each side, or until lightly golden, then transfer to a tray and bake in the oven for 10 minutes, or until cooked through. You can bake them completely in the oven and skip the frying altogether, you just need to drizzle them with olive oil and bake for about 20 minutes – they won’t be as golden, but they’ll be just as delicious.
    8. Meanwhile, peel and roughly chop the potatoes and cook in a large pan of boiling salted water for 12 to 15 minutes, or until tender.
    9. Chop up the broccoli and add it to the potatoes for the last 8 minutes. Drain and leave to steam dry, then return to the pan and mash with a knob of butter and a pinch of salt and pepper.
    10. Divide the mash between your plates and place a Kiev on top of each portion. Lightly dress the spinach leaves or rocket in a little oil and lemon juice, then sprinkle over the top as a salady garnish. Serve with a wedge of lemon on the side.
