This granola makes a GREAT, filling snack. Good dry or with milk. It is very addictive, but it's good for you, so enjoy!

Yield 10 cups, 10 serving(s)

Number Of Ingredients 8

1 1/2 cups brown sugar
1/2 cup water
4 teaspoons pure vanilla extract
1 teaspoon salt
8 cups rolled oats
1 cup pecans, coarsely chopped
1 cup almonds, coarsely chopped
dried fruits, if desired (I usually add cherry flavored cranberries and dates)

Steps:

  • Heat oven to 275 degrees F.
  • Line 2 cookie sheets with parchment paper.
  • Combine brown sugar and water in a 4 cup microwave proof cup.
  • Microwave on high 5 minutes until sugar is completely dissolved.
  • Remove from microwave and stir in vanilla and salt.
  • In large mixing bowl, mix oats, nuts, and brown sugar mixture.
  • Mix thoroughly.
  • Spread onto cookie sheets and bake 45 minutes-1 hour until golden brown.
  • When granola has cooled completely, add fruits if you wish and store in airtight container.

2/3 cup honey
1/2 cup canola oil
1/3 cup packed brown sugar
2 teaspoons vanilla extract
4 cups old-fashioned oats
1 cup sliced almonds
1 cup sweetened shredded coconut
1/2 cup sesame seeds
1/2 cup salted sunflower kernels
2 cups raisins

Steps:

  • Preheat oven to 300°. In a small saucepan, combine honey, oil and brown sugar; cook and stir over medium heat until sugar is dissolved. Remove from the heat; stir in vanilla. , In a large bowl, combine oats, almonds, coconut, sesame seeds and sunflower kernels. Add honey mixture, stirring until evenly coated. Spread onto 2 greased 15x10x1-in. baking pans. , Bake 20 minutes, stirring frequently. Stir in raisins. Bake until lightly toasted, about 10 minutes longer. Cool in pans on wire racks, stirring occasionally. Store in an airtight container.
