Such a delightful change from traditional cornbread! If you are "Team Savory" for cornbread and not into sweet cornbread, you'll adore this recipe. It's fluffy, tender, and literally melts in your mouth. Creamed corn and sour cream keep this from being dry. Heating the cast iron skillet in the oven with oil is the way most Southerners make cornbread and it makes the edges crispy. This will be perfect with beans, soups, chili, or just for snacking.

1/2 cup(s) vegetable oil
1/4 cup(s) vegetable oil (reserved for pan)
3/4 cup(s) self-rising flour (Martha White)
1 cup(s) self-rising cornmeal (Martha White)
1 cup(s) sour cream
2 - eggs
1 cup(s) cream style corn
1 cup(s) grated sharp cheddar cheese
1/2 teaspoon(s) cayenne pepper (optional)

Steps:

  • Preheat oven to 375 degrees and grab a cast iron pan. (I use a No. 8 or No. 10 cast iron skillet.) Pour 1/4 c of vegetable oil into pan and place in the oven.
  • While the pan is heating up with the oil, mix all ingredients together using a wooden spoon.
  • Pour batter into the hot skillet.
  • Return to oven at bake until golden; approximately 30 mins.

This gluten-free cornbread recipe is simple, uses minimal ingredients, and serves as a fantastic side to soups, stews, and BBQ.

Number Of Ingredients 8

1 cup gluten-free flour blend (I use my blend, Ryze, or Bob's Red Mill 1 to 1)
1 cup gluten-free corn meal
¼ cup granulated sugar
2 teaspoons gluten-free baking powder
½ teaspoon salt
2 eggs, room temperature
1 cup dairy-free milk (or regular milk, or Buttermilk for a cake-like cornbread)
¼ cup oil of choice (or melted and cooled butter)

Steps:

  • Preheat oven to 350°F. Position rack in center of oven. Grease a 12 serving cupcake pan; or a square 9x9x2-inch baking pan; set aside.
  • In a medium mixing bowl combine flour, cornmeal, sugar, baking powder, and salt.
  • In a separate medium mixing bowl, beat together eggs, milk, and oil. Add dry mixture to wet mixture, and stir just till blended.
  • Spoon batter evenly into the square pan or cupcake pans, filling about 2/3 full. For a square pan bake for 25-30 minutes or until a wooden toothpick inserted near center comes out clean. For muffins, bake for 20 minutes or until a wooden toothpick inserted near center comes out clean.
  • Store leftover muffins in an airtight container at room temperature for up to two days.

I remember eating fried cornbread as a child. My mom would serve it with Pinto's or other types of dry beans. I think it depends on where you're from, but these are also called, "Hoe Cakes." Regardless of what you call them, they're absolutely wonderful. You can add butter or honey butter, serve them with beans, soup, or greens, they go with nearly anything. I've also served them with pulled pork barbecue, it was delicious! This was one of those handed-down recipes that didn't really have any precise measurements.
