BASIC CHINESE SAUCE FOR STIR FRY RECIPE - CHINESE.FOOD.COM

Basic Chinese Sauce for Stir Fry Recipe - Chinese.Food.com image

After an emergency involving an out of date sauce & relatives coming round for dinner, I spent the next few minutes investigating the contents of my mum's cupboards & then every chinese cookbook we had to find a sauce that I could make in a couple of minutes. In the end, I found that the following ingredients were common to most recipes. If I hadn't been feeding my dad as well, I would have added something from the following - garlic, ginger, spring onion or chili pepper. As it was, I added the sugar instead to richen the sauce. I used the medium-dry sherry that my mum "cooks" with - although the recommended alternative for rice wine appears to be dry sherry.

Total Time 7 minutes

Prep Time 5 minutes

Cook Time 2 minutes

Yield 2 serving(s)

Number Of Ingredients 7

2 tablespoons dark soy sauce
1 tablespoon light soy sauce
1 tablespoon rice wine or 1 tablespoon dry sherry
1 teaspoon dark brown sugar
2 teaspoons cornflour
2 tablespoons water
4 teaspoons stock or 4 teaspoons water (I used the meat juices that came out when I fried the meat before adding the sauce)

Steps:

  • Mix cornflour and water together to form a smooth paste.
  • Add everything else to the paste and mix well- it will take a little while for the sugar to dissolve.
  • Add to meat and/or veg after stir-frying& heat until the sauce has thickened.
  • Serve immediately with rice or noodles.

SHRIMP WITH RICE SAUCE RECIPE - SIMPLE CHINESE FOOD
Isn’t this coming into the twelfth lunar month? The Chinese New Year has also entered various stages of preparation. My main goal now is to be a "little mouse"~ Well, in fact, it is to play a variety of creative dishes suitable for Chinese New Year's family banquet~ Seafood must be I have a good heart at the banquet. Every year it is steamed and something is particularly boring. I have always wanted to conceive a food that is suitable for Chinese New Year’s and festivals and does not live up to the ingredients, but also reflects the characteristics of my mind and the most important thing is good health. , I didn’t have any thoughts a few days ago, until one day I saw a show of Xingshang~ The show said that the general soup is bone soup, but there is an ingenious way to use rice soup, not only looks good, but the rice soup is more stomachic. , It is simply the gospel of the stomach tortured by the big fish and the meat~ So when I thought about it, I made a soup, that is, the shrimp slippery of rice, millet and glutinous rice~ It is really delicious to make it full of flexibility! And I'm not afraid of the burden on my stomach anymore!
Instead of whole rice soup, I use the top layer of "rice oil". This is the essence of rice soup. It is also recorded in many Chinese medicine books. It can nourish yin and grow vitality, fatten up the five internal organs, and relieve urination. It can also rehydration and replenish essence, which is beneficial to the old, why not!
