Tasty to the palate, easy on the stomach is this simple Cauliflower Fenugreek recipe. Rge thick gravy with Milk makes this Curry very nice and savoury. This Curry tastes good with Rice or Rotis or Chapatis, is easy to make and the Gravy cooked slowly with Milk has a wonderful taste. Some foods taste great while you eat them, some trouble you afterwards. But some are tasty while you eat and easy on the stomach. This Cauliflower Curry is one such Curry. Try this if you want a nice, non-spicy curry and everyone is sure to like it.

Number Of Ingredients 18

Cauliflower Pieces
Carrot Pieces
Water - Enough to immerse the Pieces
For Gravy
Oil
Onion Pieces
Green Chillies
Ginger
Garlic
Raw Coconut
Water - to grind
Salt - adequate
Milk
For the Curry
Oil
Cumin Seeds
Bunches Fenugreek Leaves
Ghee

Steps:

  • Cook the Cauliflower Pieces and Carrot Pieces in sufficient water in a cooker to 2 whistles on a high flame and then switch off the stove.
  • In another vessel, heat Oil and add all the ingredients for the Gravy and let them cook until the Onions become soft. Add the raw Coconut and fry for 2 minutes before it is removed from the fire.
  • Add the mixture to a mixer, add water and make a smooth paste.
  • Mix Milk in the soft paste.
  • Heat Oil for the Curry, add Cumin Seeds and let them splutter. Then add the Onion gravy and cook for 15 minutes on a medium flame.
  • In the thickened gravy, add the cooked Cauliflower and Carrot Pieces and Fenugreek leaves, cover and cook for 15 minutes. Keep storing. (You can add the water used to cook Cauliflower, if needed).
  • Add some Ghee before you take it off the fire. And a nice, savoury Cauliflower Fenugreek Curry is ready. This tastes great with Rotis and Rice.

2 tablespoons olive oil
1 teaspoon coriander seeds
1 teaspoon cumin seeds
1 teaspoon curry powder
1 teaspoon turmeric powder
1 large head cauliflower, cored, broken into 1-inch florets
Kosher salt and freshly ground black pepper
1 teaspoon finely grated peeled ginger
1 teaspoon finely grated lime zest

Steps:

  • Preheat oven to 450°. Stir oil, coriander seeds, cumin seeds, curry, and turmeric in a large bowl to combine. Add cauliflower and season with salt and pepper. Toss to coat cauliflower evenly. Arrange in a single layer on a large rimmed baking sheet (scrape any extra seasoning from bowl over cauliflower). Roast until cauliflower is brown around edges and crisp-tender, 10–15 minutes. Transfer to a platter and sprinkle ginger and lime zest over. Serve warm or room temperature.

    1. For the paratha dough, combine the chapati flour in a large bowl with ¾ teaspoon salt and about 200ml cold water, then knead for 10–12 minutes. Shape into a ball, cover with a damp tea towel and leave to rest.
    2. Heat most of the vegetable oil in a pan over a medium heat and sauté the onion, garlic and ginger, stirring, for 6–8 minutes, until softening. With a slotted spoon, remove the onion mixture to a bowl and set aside.
    3. Toast the mustard and cumin seeds in a dry pan over a medium heat for 30 seconds, stirring constantly with a wooden spoon, until fragrant. Transfer to a large saucepan with the rest of the vegetable oil, tomatoes, curry leaves and remaining spices. Cook for a further 5 minutes over a medium heat.
    4. Add the reserved onion mixture, potatoes and chillies and season generously with salt and pepper. Pour in about 600ml water, or enough to just cover the mixture. Bring to a simmer over a low heat, cover with a lid and continue to simmer for 8–10 minutes. Add the cauliflower and cook for another 8–10 minutes, or until the sauce has thickened and the potatoes and cauliflower are tender.
    5. Meanwhile, cook the parathas. Place a flat, cast-iron, Indian-style tava over a medium-high heat. If you don’t have one of these, use a frying pan or flat griddle. Divide the dough into 6–8 balls. Lightly flour a flat surface and roll the first ball into a 12cm circle. Lightly brush with the melted butter and place on the hot tava or pan. Cook for a few minutes on each side, or until the bread begins to blacken and blister. Repeat with the remaining dough.
    6. Serve immediately with the curry and a bowl of yoghurt on the side.
