This recipe is so good that I double it whenever I make it. Since it is peanut butter balls dipped in chocolate it is almost like candy. Real buckeyes are nuts that grow on trees and are related to the horse chestnut.

1?½ cups peanut butter
1 cup butter, softened
½ teaspoon vanilla extract
6 cups confectioners' sugar
4 cups semisweet chocolate chips

Steps:

  • In a large bowl, mix together the peanut butter, butter, vanilla and confectioners' sugar. The dough will look dry. Roll into 1 inch balls and place on a waxed paper-lined cookie sheet.
  • Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
  • Melt chocolate chips in a double boiler or in a bowl set over a pan of barely simmering water. Stir frequently until smooth.
  • Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Put back on the cookie sheet and refrigerate until serving.

This classic Southern holiday dish isn't actually made with yams—but sweet potatoes! We kick ours up with a splash of bourbon for richness.

dark brown sugar

1/2 c.

orange juice

3 tbsp.

butter, plus more for pan

1

cinnamon stick

2 tbsp.

bourbon (optional) 

Pinch nutmeg

Pinch kosher salt

medium sweet potatoes (about 3 lb.)

Steps:

  • Preheat oven to 400°. Butter a medium baking dish.  In a medium saucepan over medium heat, combine sugar, orange juice, butter, cinnamon stick, bourbon if using, nutmeg, and salt. Stir to combine and bring to a boil, then reduce to a simmer and cook until it has thickened slightly, about 10 minutes. When reduced, remove and discard cinnamon stick. Meanwhile, prep potatoes: Peel potatoes and slice into 1/2" rounds, then layer in prepared baking dish. Pour thickened syrup over potatoes and cover dish with aluminum foil.  Bake 30 minutes, then remove foil and bake about 50 minutes to 1 hour more, basting with sauce every 15 minutes.  Let cool slightly before serving.

My suggestion would be to google how to candy Maple Syrup and adjust this recipe accordingly.
