Yield 1 1/2 cups corn kernels

Number Of Ingredients 2

3 ears corn
Vegetable cooking spray

Steps:

  • Prepare grill or broiler. Place corn on grill rack or broiler pan coated with cooking spray, and grill or broil 20 minutes or until corn is lightly browned, turning frequently. Let cool. Cut corn kernels from cobs. Reserve corn cobs for Corn Stock, if desired.

Steps:

  • Sauté corn kernels in a preheated large cast-iron skillet 3 to 5 minutes, stirring constantly, until kernels are lightly charred. Season with coarse salt and freshly ground pepper to taste. (Can be made up to 3 hours ahead, covered, and kept at room temperature).
