To make these lime bars, start with our recipe for Mixed Citrus Bars. Simply substitute lime zest for lemon zest and lime juice for lemon juice. Stir in a small amount of mint green food coloring to give it a pretty lime green hue. We love the way these lime bars look when paired on a white tray with our Grapefruit Bars and Orange Bars. Together, the bars make for a bright presentation that's the perfect sweet treat to pair with lunch, afternoon tea, or even as a no-fuss after-dinner dessert. Bars are a great bake and take treat for picnics, bake sales, and road trips. They tend to be easier than most cookie recipes since they don't require dropping dollops of dough on the baking sheet. All you do is spread the batter or crust in the bottom of a pan. In the case of these lime bars, you'll first prebake the crust before adding the lime filling and baking once more until the filling is set. When the pan has cooled, remove from the pan and allow to cool completely on a wire rack before cutting into 2 dozen bars. Garnish with a light dusting of powdered sugar if you like. You can even add a bit of lime zest for an extra hit of citrus flavor and color.

This recipe is based on the famous Key lime pie from Joe's Stone Crab restaurant in Miami Beach. If you can't find Key limes, use regular fresh lime juice.

- Make crust: Preheat oven to 350 degrees. Stir together graham cracker crumbs, sugar, and butter in a small bowl. Press evenly onto bottom of an 8-inch square glass baking dish. Bake until dry and golden brown, about 10 minutes. Let cool completely on a wire rack. (Leave oven on.)
- Make filling: Put egg yolks and lime zest in the bowl of an electric mixer fitted with the whisk attachment. Mix on high speed until very thick, about 5 minutes. Reduce speed to medium. Add condensed milk in a slow, steady stream, mixing constantly. Raise speed to high; mix until thick, about 3 minutes. Reduce speed to low. Add lime juice; mix until just combined.
- Spread filling evenly over crust using a spatula. Bake, rotating dish halfway through, until filling is just set, about 10 minutes. Let cool completely on a wire rack. Refrigerate at least 4 hours (or overnight).
- Cut into 2-by-2-inch bars. Put cream in the clean bowl of an electric mixer fitted with the clean whisk attachment. Mix on medium-high speed until stiff peaks form. Garnish bars with whipped cream and a slice of lime.

- Use the edges of the foil to lift the bars out of the pan, then peel down the sides of the foil and slide a metal spatula underneath to loosen the crust from the foil. Slide the bars off the foil onto a cutting board and slice into 16 squares. Dust with confectioners’ sugar and top with more lime zest before serving. They are best eaten on the first or second day, but will keep for up to 5 days stored in an airtight container in the refrigerator.
