This recipe was given to my wife in Seattle by a friend. My wife told her, I don't read chinese so her daughter translated it for us. It's authentic and it's delicious. LR Beckwith

1 lb pork tenderloin
2 green peppers
4 slices pineapple (or 1 cup Cantonese pickles)
6 cups peanut oil (6 cups)
1/2 teaspoon salt (to marinate pork)
1/2 tablespoon soy sauce
1 tablespoon cornstarch
1 tablespoon cold water
1 egg yolk
3 tablespoons vinegar (Seasoning Sauce)
4 tablespoons sugar
4 tablespoons tomato catsup
4 tablespoons cold water
3 teaspoons cornstarch
1 teaspoon salt
1 teaspoon sesame oil
3 tablespoons cornstarch

Steps:

  • Pound pork with the back of a cleaver (this is to tenderize the pork), and then cut into 1-inch squares.
  • Soak with marinade for at least half an hour.
  • Cut green pepper into halves, remove seeds and membrane, and cut into 1" squares.
  • Next cut 4 slices of pineapple into the same size squares.
  • Set aside.
  • Heat 6 cups oil.
  • While oil is heating, coat each piece of pork in cornstarch.
  • When oil is ready, fry pork until brown and done (about 2 minutes), take out, reheat oil then fry once more until crispy.
  • Remove pork and drain off oil from frying pan.
  • Put back into frying pan 2 T.
  • of oil; fry the green pepper and pineapple, stirring constantly.
  • Add the seasoning sauce continuing to stir fry, until thickened.
  • Turn off the heat.
  • Add the pork, mix well and serve immediately.
  • Serve over rice!

Sweet and Sour Pork tenderloin is a dedicate Chinese dish which is popular among the whole China.

200 g pork tenderloin
1/2 tsp. white pepper
1 tsp. salt
1 tbsp. beer or Chinese cooking wine
1/4 tsp. sugar
4-5 pieces of smashed ginger
oil for frying
50 g flour
50 g cornstarch
1/4 tsp. baking powder ( ,optional)
100 ml water
4 tbsp. tomato ketchup
1/2 tbsp. vegetable cooking oil
4 tbsp. sugar
2 tsp. rice vinegar or 1 tbsp. lemon juice
1/4 tsp. salt
1/2 cup hot water + 1 tsp. chopped scallion and 1 tsp. chopped ginger
1/2 tbsp. cornstarch + 1 tbsp. water

Steps:

  • Soak chopped scallion and ginger with 1/2 cup of hot water. And mix cornstarch with water to make cornstarch.
  • Cut the pork tenderloin into small strips around 1.5 cm thick. Add all the marinating sauce, combine well and let the pork absorb all of the seasonings. Set aside for at least 10 minutes.
  • Prepare the batter| in a large bow combine cornstarch, flour, salt and water. Stir until all of the ingredients are well incorporated and set aside for 10 minutes.
  • Mix the pork strips with the coating batter.
  • Heat oil in a wok until 160 degree C (proof testing, when you insert a chopstick in, there will be lots of fine and small bubbles around). Place the pork strips one by one and fry until slightly Browned. Do not overcook!!
  • Heat oil until almost smoky (at least 200 degree C) and place the fried pork strips in, continue frying 6-10 seconds. Transfer out immediately.
  • Fry the ketchup and sugar with 1/2 tablespoon of oil until there are large bubbles over slowest fire.
  • Stir in ginger and scallion water.
  • Add vinegar (lemon juice), salt and starch water and heat until well thickened.
  • Place the fried pork strips in and coat well. Please fish this process as quick as possible. Sprinkle some toasted sesame seeds as decoration.

  • To Prep Dice all the fruits and vegetables into cubes and set aside. Combine all marinade ingredients together then add in pork loin. Mix well then keep it in the fridge for 30 mins. To Prep Sauce Mix all the sauce ingredients together and set aside. To Cook Pork Loin After its time in the fridge, coat pork loin with potato starch and deep fry in 2 cups of oil at around 180°C for 5 mins or until golden in colour. Set aside. To Cook Chinese Stuffed Donut Cut the Chinese cooked donut into 2cm long strips. Hand chop all the prawn meat with a knife to create a mince mixture, season with salt and pepper and stuff the prawn mince into Chinese cooked donut. Deep fry the Chinese stuffed donut in 2 cups of oil for 3-4 mins at around 160°C or until golden in colour. Set aside. To Cook Heat up a wok on high heat. Add red onion, red capsicum and green capsicum, cook for 1 min. Add in previously mixed sauce mixture and cook for 30 secs on high heat. Adjust the consistency with potato starch. Before turning off the heat, add apple, pineapple, nectarine, cooked pork and Chinese stuffed donut. Toss quickly and coat with sauce. In order to maintain the fruits' crunchiness, you don't need to cook these ingredients for long. Garnish with spring onion and sesame seeds, and serve with steamed rice.
