Homemade sweet pickles are perfect to munch on during the summertime, or as a quick snack or side during the colder months. Ingredients

2 cups thinly sliced cucumbers (1/4-inch thick)
1/2 cup thinly sliced sweet onion
1 cup cider vinegar
1/2 cup sugar
1 tsp McCormick® Celery Seed
1 tsp McCormick® Mustard Seed
1 tsp non-iodized salt

Steps:

Place cucumber slices and onions in medium glass bowl. Set aside. Mix remaining ingredients in medium saucepan. Bring to boil on medium-high heat, stirring to dissolve sugar and salt. Reduce heat to low; simmer 5 minutes.
Pour hot liquid and spices over cucumbers and onions. Cool slightly. Cover.
Refrigerate pickles at least 2 hours before serving. Store in tightly covered container in refrigerator up to 2 months.

2 cups diced peeled potatoes (about 1 pound)
1 recipe Old-Fashioned Egg Salad
1/4 cup mayonnaise
1 teaspoon prepared mustard
1/2 teaspoon dried minced onion
1/4 teaspoon salt
Lettuce leaves
Slice radishes, optional

Steps:

In a saucepan, cover potatoes with water and cook until tender but firm. Drain and cool. In a bowl, combine egg salad, mayonnaise, mustard, onion and salt. Stir in cooled potatoes. Cover and chill. Serve on lettuce leaves; garnish with radishes if desired.
