Zucchini Curry - Curried Zucchini | Simple Indian Recipes image

Zucchini Curry - An indian style curry made with zucchini that goes well with any indian flat bread and plain steamed rice. Indian style Curried zucchini.

Total Time 40 minutes

Prep Time 10 minutes

Cook Time 30 minutes

Number Of Ingredients 14

Zucchini - 2
Onion - 1 (finely chopped)
Tomato - 2 (finely chopped or pureed)
Ginger garlic paste - 1 tbsp
Green Chillies - 2 (finely chopped)
Coriander-cumin powder - 1 tsp
Red Chili powder - 1 tsp (or as needed)
Turmeric powder - 1/4 tsp
Garam Masala - 1/4 tsp
Mustard seeds - 1/4 tsp
Cumin seeds - 1/2 tsp
Cilantro - for garnish
Salt - as needed
Oil - 2 tbsp

Steps:

  • Chop the zucchini into big chunks.
  • Heat 1 tbsp of oil in a pan and shallow fry the pieces. Keep it aside.
  • Remove the zucchini pieces from the pan, add an additional tbsp of oil and splutter the mustard and cumin seeds.
  • Saute the onions with the green chillies for 10 minutes until they turn nice golden brown.
  • Add the ginger garlic paste and fry for a minute.
  • Add the tomato pieces/puree and let the mixture cook for at least 10 minutes until the tomatoes are pulpy.
  • Add all the dry spice powders: chilly powder, coriander-cumin powder , turmeric powder, garam masala powder and salt.
  • Add the zucchini pieces and required water. Bring the gravy to a boil.
  • Simmer the gravy till oil floats on top. Check for seasoning and adjust if needed.
  • Finally, add finely chopped cilantro and switch off.

Thanks to the inspiration from two other AllRecipes recipes, I concocted this and it was a winner. It wasn't really spicy at all and the kids loved it. Excellent served with a dollop of sour cream.

Number Of Ingredients 14

2?½ cups grated zucchini
1?? cups finely chopped onions
? cup chopped green bell pepper
? cup chopped red bell pepper
1 jalapeno pepper, minced
3 eggs, lightly beaten
½ teaspoon ground cumin
½ teaspoon ground coriander
salt to taste
½ cup crumbled feta cheese
½ cup chickpea flour
½ cup chopped fresh cilantro
¼ cup rice flour
3 tablespoons canola oil, or as needed

Steps:

  • Place zucchini in a colander. Cover with cheesecloth or paper towels and squeeze out as much moisture as possible.
  • Transfer zucchini to a large bowl; mix in onions, green bell pepper, red bell pepper, and jalapeno pepper. Add eggs, cumin, coriander, and salt; mix well. Stir in feta cheese, chickpea flour, cilantro, and rice flour until batter is well blended and thick.
  • Heat 1 tablespoon oil in a skillet over medium heat. Drop pancake-sized scoops of batter into the skillet; cook until golden brown, 2 to 3 minutes per side. Transfer to a serving plate. Repeat with remaining oil and batter.
