Chocolate Chip Zucchini Bread Recipe: How to Make It image

Every summer my mother and I try to bake as many loaves of this chocolate chip zucchini bread as possible. It’s hard—my five children eat them as soon as they’re cool enough. —Beth Sine, Faulkner, Maryland

Yield 2 loaves (12 slices each).

Number Of Ingredients 12

3 cups all-purpose flour
2 cups sugar
3 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
3 large eggs
1 cup canola oil
3 teaspoons vanilla extract
2 cups shredded zucchini
1-1/2 cups semisweet chocolate chips
1 can (8 ounces) unsweetened crushed pineapple, drained

Steps:

  • In a large bowl, combine the flour, sugar, cinnamon, baking soda, salt and baking powder. In a small bowl, whisk the eggs, oil and vanilla. Stir into dry ingredients just until moistened. Fold in the remaining ingredients., Transfer to two greased 8x4-in. loaf pans. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

Moist enough to feel like a cake, this recipe is a great way to use up excess zucchini as well as sneak vegetables into a sweet treat. There’s plenty of chocolatey flavor, so the entire family will love this healthier take on zucchini bread. Plus, it easily doubles and freezes well, so you can enjoy it even after summer ends.

Yield 16 servings (serving size: 1 slice)

Number Of Ingredients 12

¾ cup sugar
3 tablespoons vegetable oil
2 large eggs
1 cup applesauce
2 cups all-purpose flour
2 tablespoons unsweetened cocoa
1?¼ teaspoons baking soda
1 teaspoon ground cinnamon
¼ teaspoon salt
1?½ cups finely shredded zucchini (about 1 medium)
½ cup semisweet chocolate chips
Cooking spray

Steps:

  • Preheat oven to 350°.
  • Place first 3 ingredients in a large bowl; beat with a mixer at low speed until well blended. Stir in applesauce.
  • Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and the next 4 ingredients (through salt), stirring well with a whisk. Add flour mixture to sugar mixture, beating just until moist. Stir in the zucchini and chocolate chips. Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out almost clean. Cool in pan 10 minutes on a wire rack, and remove from pan. Cool completely on wire rack.
