This is an amazing, delicious, and healthier dish. My whole family enjoys it, and it is ready in less than 20 minutes! Sprinkle with extra Parmesan cheese and put it in the microwave for 10 seconds to melt.

2 tablespoons olive oil
1 onion, chopped
2 tablespoons garlic powder, or more to taste
8 zucchini, spiralized
2 tomatoes, chopped
2 cups Parmesan cheese
1 pinch salt and freshly ground black pepper to taste

Steps:

  • Combine olive oil, onion, and garlic powder in a skillet over medium heat and heat until oil starts to sizzle, about 3 minutes. Add zoodles and toss with pasta tongs. Cook for 5 minutes, tossing occasionally.
  • Stir in tomatoes and Parmesan cheese. Season with salt and pepper.

8 oz. whole-grain spaghetti
Kosher salt and pepper
1/3 c. half-and-half
1 clove garlic, smashed
1/3 c. sprig rosemary
1/3 c. freshly grated Parmesan cheese, plus more for serving
2 tbsp. olive oil
1 lb. pre-cut zoodles (spiralized zucchini)
1 tsp. finely grated lemon zest
5 c. baby spinach

Steps:

  • During the last 5 minutes of the pasta cooking, heat the oil in a large nonstick skillet over medium heat. Add the spiralized zucchini and cook, tossing gently until just tender, about 2 minutes. Season with 1/4 teaspoon each salt and pepper then fold in the spinach, cooked pasta and sauce and some reserved cooking liquid if mixture seems dry. Serve with additional Parmesan, if desired.
