I can't stand oatmeal, but have been trying to eat healthier these days. I stumbled upon this creation, it is now what I eat every day for breakfast, sometimes with fruit added.....It is delicious!

3/4 cup plain fat-free yogurt
1 tablespoon sugar (I use splenda)
1/4 teaspoon vanilla extract (madagascar)
1/2 cup old fashioned oats (NOT quick cook!)
1 teaspoon cinnamon (optional)

Steps:

  • Mix all together, enjoy!
  • Typically, I mix yogurt, sugar and vanilla in morning, add oats immediately before I leave for work and eat once I get there (about 1/2 hour later). It is delicious!

rolled oats
1 cup
white flour or whole wheat pastry flour (or combination)
1 cup
yogurt
1
egg
¼ cup
honey
½ tsp.
salt
1 tsp.
baking soda
? cup
melted butter, ghee, or coconut oil
¼ cup
dried cranberries (optional)
¼ cup
chopped pecans (optional)v

Steps:

  • Prior to baking, combine the oats, flour, and yogurt, cover the bowl and soak for 12 hours.
  • Preheat the oven to 425°F.
  • Add remaining ingredients and stir to combine. Do not over mix.
  • Fill muffin tins ? full.
  • Bake 15-20 minutes, until muffins are set and lightly browned.
