Creamy yoghurt & mint dip | Jamie Oliver recipes image

This dip is delicious, much tastier than the shop-bought ones you can get, and you know exactly what’s gone into it. Plus, it's so easy to whip up, just serve with some crinkle-cut veggies to dip for a fun snack.

4 sprigs of fresh mint
1 lemon
¼ clove of garlic
200 g natural yoghurt
sea salt
freshly ground black pepper

Steps:

    1. Pick and finely chop the mint leaves on a chopping board, discarding the stalks, then add them to a mixing bowl.
    2. Use a microplane to finely grate the zest of half a lemon onto the board, then transfer to the bowl.
    3. Cut the lemon in half.
    4. Squeeze the juice into a bowl, using your fingers to catch any pips.
    5. Peel and very finely chop the garlic on a board, then scoop it up and add to the bowl.
    6. Add the yoghurt and a tiny pinch of salt and pepper, then stir everything together.
    7. Have a taste and add a squeeze more lemon juice, if you think it needs it.
    8. Transfer to a serving bowl, and serve with a platter of veggies for dipping.

This simple salmon recipe is so delicious, incredibly easy and great for feeding a crowd.

3 kg whole salmon from sustainable sources, ask your fishmonger, scaled, filleted and pin-boned, or use 2x1.2kg sides of salmon fillet
8 sprigs fresh rosemary
extra virgin olive oil
500 g fat free natural yoghurt
1 bunch fresh dill chopped
1 lemon juice and zest of

Steps:

    1. This is an easy way of cooking whole salmon fillets. It’s simple to serve and just as good cold as it is hot. If you’re not sure how to prepare the fish, get your fishmonger to do it for you. I’ve cooked it on a wooden plank in my outdoor wood-fired oven, but you can cook it in a large roasting tray in the oven.
    2. Preheat the oven to 200ºC/400ºF/gas 6. Place the salmon fillets skin-side down in a large clean roasting tray – cut each in half if they don’t fit. Lay the rosemary on top and drizzle with olive oil. Gently rub the oil and rosemary all over the fish, and season. Bake for 20 minutes or until just cooked. (Alternatively, place on a clean smooth wooden plank and cook in an outdoor wood-fired oven for 20 minutes.)
    3. Meanwhile, mix the yoghurt and dill with the grated zest of the lemon, a few drops of juice and season. Cut portions of salmon off the skin and serve with the Italian farro salad.

    1. Preheat the oven to 220°C/425°F/gas 7.
    2. Click off and discard only the tatty outer leaves from the cauliflower, then cut it into quarters. Quarter the peppers and halve the tomatoes, removing and discarding the seeds. Break the unpeeled garlic bulb into cloves. Mix it all in a large sturdy roasting tray with 2 tablespoons each of olive oil and red wine vinegar, the harissa, a pinch of sea salt and black pepper and a good splash of water.
    3. Cover the tray tightly with tin foil, put it on a medium heat on the hob, and when it starts to sizzle, transfer it to the oven for 40 minutes.
    4. Get the tray out of the oven, remove the foil, tilt the tray and spoon all the delicious juices into a little jug for later. Return the tray to the oven for 20 minutes, to get golden.
    5. Place the couscous in a bowl, add a pinch of salt and pepper, then just cover with boiling kettle water, and cover.
    6. Pick most of the mint leaves into a blender, blitz with 6 tablespoons of yoghurt until smooth, then ripple it back through the remaining yoghurt.
    7. Fluff up the couscous. Warm the reserved juices. Squeeze the soft garlic out of the skin. Serve it all together, sprinkled with mint leaves.

  • Ingredients out • Kettle boiled • Griddle pan, high heat • Medium lidded pan, medium heat • Large casserole pan, low heat • Food processor (bowl blade) START COOKING Remove the outer leaves from the cauliflower, then slice it 1cm thick and put it on the griddle pan, turning when lightly charred. Put 1 mug of rice and 2 mugs of boiling water into the medium pan with the cloves, lemon half and a pinch of sea salt, and put the lid on. Pour 2 tablespoons of oil into the casserole pan, then quickly stir in the mustard and fenugreek seeds, turmeric and curry leaves. Peel the ginger and garlic cloves, and trim the spring onions. Pour in the coconut milk, drain and add the chickpeas, then tip in the pineapple chunks and their juices. Add the griddled cauliflower, cover, turn the heat up to high and bring to the boil. Put the uncooked poppadoms into the microwave (800W) for a minute or two to puff up. Tear off the top leafy half of the mint and bash to a paste in a pestle and mortar. Stir in the yoghurt, add a good squeeze of lemon juice and season with salt and black pepper. Squeeze the juice of the remaining lemon into the curry and season to taste. Sprinkle over the coriander leaves and serve with the rice and poppadoms.
