I blame James Bond for the most common mistake made by a surprising number of professional bartenders out there: the propensity to shake absolutely every cocktail they serve. Bond’s preference for a shaken martini should be the exception, not the rule. When mixing a cocktail that contains only spirits, alcoholic mixers (like vermouth or Cointreau), or wine, stir the drink to maintain clarity. The result is a silky, cold, and well-balanced cocktail that is not aerated or bruised. Try this recipe for a Yellow Jacket adapted from Kosmas & Zaric’s fantastic book, Speakeasy, to master your stirring technique.

2 ounce reposado tequila
1 ounce st-germaine elderflower liqueur
¾ ounce yellow chartreuse
1 dash of orange bitters
lemon peel for garnish

Steps:

  • In a pint glass, add the tequila, St-Germaine, Yellow Chartreuse, and orange bitters. Fill glass two-thirds full with ice, and stir using a bar spoon for twenty to thirty seconds, until the drink is cold. Using a julep strainer, strain the cocktail into a chilled martini or coupe glass. Run the lemon peel along the rim of the glass, twist it over the drink to release the essential oils, and drop it in. Make sure to use the best reposado tequila you can find. Patron will do fine, but there are a lot of options out there.

1 lb yellow fin tuna
6 tablespoons light soy sauce
2 tablespoons black sesame seeds
2 tablespoons white sesame seeds
2 tablespoons olive oil

Steps:

  • Cut tuna steak in half.
  • Pour soy sauce into shallow container and place tuna into soy sauce for 10 minutes. Flip pieces over and allow to sit in soy sauce for another 10 minutes.
  • Pour both types of sesame seed into a small plate and coat tuna on all sides by pressing the tuna into the seeds.
  • Put olive oil into pan and heat until it reaches smoking point.
  • Sear tuna on all sides for five seconds. Seeds are very likely to pop from the heat.
  • Pull tuna from pan and allow to rest for 10 minutes.
  • Slice thinly and serve.

PIZZA HUT PAN PIZZA COPYCAT RECIPE | TOP SECRET RECIPES
The secret to perfect pan pizza is pressing the dough into a well-oiled pan (Pizza Hut uses soybean oil), then the pan is covered and the dough rises in a heated cabinet for 45 to 60 minutes. When the dough is topped, the edge is sprayed with a butter-flavored “food release” and the pie is baked at 500 degrees F until perfectly browned on top. You can use a 9-inch, 12-inch, or 15-inch deep dish pizza pan or cake pan for this recipe, and you’ll want to preheat your oven with a pizza stone in it to simulate the type of oven used at the chain. The hot ceramic surface of the pizza stone will cause the oil in the pan to cook the bottom of the dough so that it’s brown and crispy like an authentic pan pizza crust should be. I tried making the dough with cake flour, all-purpose flour, superfine “00” flour, bread flour and many combinations of these different flours which all contain varying amounts of gluten. I even tried rising the dough slowly in the refrigerator for various lengths of time as long as up to four days. But after a month of testing and about 30 pan pizzas later, I found the best dough to be straight bread flour, and to let the dough rise at room temperature.
