Yellow Cake Batter Ice Cream Recipe - Food.com image

I created this recipe because it is the number choice for my kids at the local ice cream shop! It's closed all winter so this is a good way to get us through til the summer!

Total Time 35 minutes

Prep Time 5 minutes

Cook Time 30 minutes

Yield 2 pints, 6-8 serving(s)

Number Of Ingredients 4

1 pint heavy cream
1 pint light cream
1/2 cup granulated sugar
1 cup yellow cake batter

Steps:

  • Whisk all ingredients together until smooth.
  • Pour into a chilled ice cream maker (I use a Cuisinart).
  • Let it run about 30 - 35 minutes until thick and creamy.
  • Afterwards, I transfer it to another container and freeze it for a couple of hours to get a firmer consistency.
  • Enjoy!

Never would think that this a sweet pie, but it sweet and delicious!!! Great with french vanilla ice-cream too!! YUMM-YUMM!!!!

Number Of Ingredients 10

2 cup(s) yellow squash
1 - pie shell, baked ( i prefer graham cracker)
1 cup(s) evaporated milk
2 cup(s) sugar or sugar cinnamon mix (or splenda)
1 - egg
2 teaspoon(s) butter
3 teaspoon(s) all purpose flour (or baking mix)
1 1/2 teaspoon(s) vanilla extract
1/2 teaspoon(s) cinnamon (if you don't use sugar/cinnamon mix)
1/4 tablespoon(s) freshly grated nutmeg

Steps:

  • Cook squash until tender. Drain squash. Excess water will make pie too "mushy." Allow squash to cool for 10-15 minutes.
  • Put all ingredients into a blender or food processor and puree.
  • Pour into pie shell & top with a sprinkle of brown sugar & cinnamon.
  • Bake on middle rack @ 325 for 50-65 minutes. Let cool on pie rack.
  • Top with Ice Cream or a slice of cheese, depends on the area you were raised! I have also topped it with some good condensed milk as well!! Just add your own flair to the pie whether it be sweet or spicy!!
