Essentially a potato kugel with meat, Yapchik is a true Jewish comfort food with shredded potato, some onion, flanken, salt and pepper, baked for many hours, if you haven't had it, now is your chance.

Number Of Ingredients 7

8 large Russet potatoes
1 Spanish onion
7 eggs
1 cup water
1¼ cups extra virgin olive oil, such as Colavita
1 tablespoon + 1 teaspoon salt
1.2 pounds boneless flanken, cubed

Steps:

  • 1. Preheat oven to 425°F. 2. Using a kugel blade, process potatoes and onions. Note: a kugel blade comes with only some food processor brands. If you don’t have one, grate the potatoes and onions with the grater attachment and then pulse the mixture using the “s” blade, until the mixture is fully mixed. Do not over process as that will turn the mixture into liquid.  3. Remove mixture from food processor and place in mixing bowl. 4. Process eggs, water, oil, and salt in the food processor and pour into the potato-onion mixture.  5. Add the meat into the mixing bowl and combine everything together.  6. Pour in a 9x13 in. baking pan. 7. Bake uncovered for 1½ hours.  8. Lower oven temperature to 200°F. 9. Cover baking pan well with 2 layers of silver foil. You want to seal in all moisture.  10. This Crock Pot Yapchik is a delicious recipe for Shabbat lunch, cooked overnight in the slow cooker.

Number Of Ingredients 6

5-6 russet potatoes
1 onion, quartered
2 eggs
1-2 tablespoons schmaltz or oil
3 or more pieces of semi -thick slices of meat (such as minute steaks) or flanken
Salt and pepper to taste

Steps:

  • 1. Grate potatoes and onion in food processor or by hand. Rinse under cold water, and squeeze out liquid. Mix with beaten eggs, schmaltz or oil. and salt and pepper, (if using). 2. Put balls of aluminum foil on the bottom of your crock pot, (this keeps the kugel from burning on the bottom). Almost cover with water, about ½ to ¾ of the way up the aluminum balls. Use a crock pot liner. Fill half of the crock pot liner with your potato kugel mixture.  3. Cut meat in half and place over kugel. Put remaining potato mixture over the meat. Place cooking bag on top of the aluminum balls, and close crock pot liner with a loose knot. Cover, turn crock pot to low heat overnight. I usually start mine about noon the day before Shabbos.

  • Start with an oven preheated to 350 degrees F. Using the kugel blade (shredder) on your food processor, process your onions and potatoes, starting with an onion and alternating between potatoes and onions. (This helps keep the potatoes white.) There will be a lot of juice - drain as much as possible off now, but you will have to drain it again later. Add eggs, salt, pepper, and oil and mix very well. I would say use your hands ( I do) to ensure complete mixing, but you could use a spatula or wooden spoon as well. To assemble: Taking large handfuls of the mixture, press gently to drain excess liquid and make an even layer in the bottom 1/3 of the disposable pan. Add your deli meat, laying the peices neatly so the entire area is covered. (I did pastrami, turkey, corned beef, but you can pick your own deli meats and combos. Just make sure you lay the meat evenly and so the entire surface areas is covered.) Make an even layer of potato mixture over the meat, pressing gently to remove excess liquid, til the pan is filled. Take a bit of salt and pepper and sprinkle a fine layer over the top of the kugel. Bake in preheated oven for 2-3 hours, or until a knife inserted comes out clean and very hot to the touch. Turn off oven, leave in for another hour or so to cool slightly. Yield one regular 9''x13'' disposable pan and a bit extra for a small regular potato kugel (6'' round) OR one deep 9''x13''disposable pan)
