Shanghai Yangchun Noodles recipe - Simple Chinese Food image

Yangchun noodles is a traditional snack of Shanghainese. It was used by some people; it is as if you can see the shape when you close your eyes, you can smell the fragrance when you stretch your nose, and the aftertaste is like leaving your cheek to describe a bowl of Yangchun noodle. All are loved by the public. Yangchun noodles is a bowl of noodle soup with a savory flavor from the broth. The noodles are chewy, the soup is very delicious, and the green onion fragrance is added. Try it if you like it.

Number Of Ingredients 6

200 g Flour
70 ml Shimizu
2 grams salt
1 tbsp Fresh soy sauce
1 bowl Broth
5 grams Shallots

Steps:

  • Prepare flour and water
  • Pour the flour into the noodle maker, plug in the power, press the chewy noodles, and then press the start button, then plug in the cup with water
  • The noodles will be out in a few minutes
  • Prepare a bowl of hot broth and chopped green onion when making noodles
  • Add fresh soy sauce to the broth to make it salty and umami
  • While waiting for the noodles, pour water into the pot and boil, add the noodles and turn off the heat
  • Scoop up the noodles and put them in the broth sprinkle with chopped green onions.
  • Enjoy, delicious breakfast

This is a common breakfast noodle in China. Normally thin noodles are used for this, here in Thailand, I will use standard Japanese egg noodles (ramen) which look very much like flat spaghetti. The packs I have seen in Tesco are 200 grams with 4 bundles of noodles, so about 50 grams of noodles per serving. I made this on 24 Oct 2017, absolutely wonderful for such a simple dish. The sesame oil is key with this.

50 grams dry Chinese egg noodles (50 grams per serving)
3 cups chicken stock (fresh or from powder)
1 tablespoon soy sauce
1/2 teaspoon sesame oil
1/4 teaspoon sugar
1 spring onion (finely chopped)

Steps:

  • Heat the stock to boiling then add the noodles and cook until tender.
  • Place the cooked noodles in a serving bowl, ladle on about 2 cups of the broth, drizzle in the sesame oil, sprinkle the spring onion on the noodles. Serve. I added a tea egg.
