He sells lamb kabobs spiced with irresistible goodness that it's hard to have just one. The person is from Western China, a predominantly Muslim region with cultures blended from Kyrgyzstan, Tajikistan, and others in the region. This spice mix is a great ingredient to have around for sautés, roasts, BBQ's or whatever else you feel like adding some Western China spice to. If you're in China, you can buy a packet in your grocery store.

1/4 cup cumin seed
2 tablespoons dried szechuan chile flakes
2 tablespoons black pepper
1 tablespoon szechuan peppercorns
1 tablespoon ground ginger powder
1 tablespoon garlic powder
1 1/2 teaspoons chili powder
1 1/2 teaspoons sea salt

Steps:

  • Toast Sichuan peppercorns til fragrant. Toast cumin until lightly browned.
  • Grind Sichuan peppercorns, cumin, chili flakes and black pepper in a spice grinder.
  • Stir in remaining ingredients.

Sichuan style Barbecue mix and dry dipping sauce

1 cup Sichuan pepper flakes
1 tbsp. Sichuan peppercorn
1 tbsp. cumin seeds
1/2 tbsp. fennel seeds
2 tbsp. toasted sesame seeds
3/4 cup nuts (, peanuts and walnuts (cashew can work fine too))
1 star anise
1 small piece Chinese cinnamon
1 small piece dried tangerine ( , optional )
1 small piece sand ginger ( , optional )
1 tbsp. sugar
1/2 tbsp. salt
1 tbsp. ginger powder
1 tbsp. garlic powder

Steps:

  • Toast peanut and walnut with slow fire. Set aside to cool down.
  • Toast Sichuan peppercorn, fennel and cumin seeds over slowest fire until aromatic.
  • Place toasted peanuts, walnut, sesame seeds and all the other ingredients expect pepper flakes in a blender. Blend until fine and smooth.
  • Add pepper flakes, ginger powder and garlic powder, sugar and salt in. Continue blend for a while to mix well. Break well and then slightly cool, contained in air-tight bag or container.
  • Sichuan dry dipping
