1?¾ cups milk
¼ cup white vinegar
2 cups gluten-free all-purpose flour
¼ cup white sugar
2 teaspoons baking powder
1?¼ teaspoons xanthan gum
1 teaspoon baking soda
1 teaspoon salt
2 eggs, beaten
¼ cup butter, melted

Steps:

  • Preheat a griddle to 300 degrees F (150 degrees C).
  • Stir milk and vinegar together in a bowl; let sit until the milk 'sours,' about 5 minutes.
  • Mix flour, sugar, baking powder, xanthan gum, baking soda, and salt together in large mixing bowl.
  • Beat eggs and melted butter into soured milk; pour into the flour mixture and stir with a whisk until no lumps remain.
  • Pour batter by the 1/4 cup onto the hot griddle and cook until browned completely, about 3 minutes per side.

Make this easy gluten free pancakes recipe from scratch from a homemade gluten free pancake mix.

1 cup gluten free all-purpose flour
1 tablespoon granulated sugar
3 teaspoons gluten free baking powder
1/2 teaspoon salt
1 egg
3/4 cup milk of choice or buttermilk
2 tablespoon vegetable oil or canola oil
1 teaspoon vanilla extract
Cooking spray, butter, or buttery spread

Steps:

  • In a medium mixing bowl, mix dry ingredients together until well combined.
  • Store pancake mix in an airtight container or jar with a lid.
  • Add dry pancake mix to a large measuring cup or mixing bowl.
  • Add wet ingredients to dry mix and whisk until well combined.
  • Heat griddle or frying pan.
  • Spray with cooking spray or use a pat of butter to grease the pan.
  • Scoop 1/4 cup of pancake batter onto the hot griddle or frying pan.
  • Cook the pancakes until the batter starts to bubble and the pancakes start to puff up.  Then flip the pancakes over and cook until they are golden brown.
  • Keep warm in the oven. Or serve immediately with butter, maple syrup, fruit, or other toppings. Refrigerate or freeze leftovers.
