Burgers are always a family favorite. Make a big batch and enjoy for a few meals. Or freeze for quick meals another time. Serve these on buns, in lettuce wraps, over rice, with baked fries - whatever satisfies. If you don't have ground turkey breast, you can swap ground chicken breast in its place. Load them up with easy toppings like water-packed roasted peppers, pickled onions, leafy greens and sliced tomato.

0.5 tsp Dried tarragon
0.5 tsp Table salt
0.25 tsp Black pepper freshly ground

Steps:

  • Off heat, coat a broiler rack with cooking spray. Preheat the broiler.
  • In a large bowl, gently combine the turkey, onion, egg, parsley, garlic, tarragon, salt, and pepper. Form the mixture into 4 burgers. Broil the burgers 4 inches from the heat until cooked all the way through, about 5 minutes per side.
  • Serving side: 1 burger

5 Tbsp Barbecue sauce divided
0.75 tsp Table salt divided
0.5 medium Uncooked onion(s) sweet, cut into 4 (1/2-inch-thick) rounds
0.25 cup(s) Weight Watchers Reduced fat Mexican style shredded cheese
4 item(s) Light whole wheat English muffin(s) toasted
4 leaf/leaves, large Lettuce or 1 cup shredded romaine
0.5 large Fresh tomato(es) cut into 4 thick slices

Steps:

  • Off heat, coat grill rack or grill pan with nonstick spray. Preheat gas grill or grill pan to medium-high, or prepare medium-high fire in charcoal grill.
  • In medium bowl, mix turkey, scallions, breadcrumbs, 3 tbsp plus 2 tsp barbecue sauce, and 1/2 tsp salt. Using damp hands (to prevent meat from sticking), form turkey into 4 (1/2-inch-thick) patties. Coat onion with nonstick spray and sprinkle with remaining 1/4 tsp salt.
  • Grill patties and onion, turning once, until instant-read thermometer registers 165°F when inserted horizontally into patties and onion is lightly charred and tender, about 10 minutes. Transfer onion to plate. Turn off heat on gas grill (or grill pan), or move burgers to cooler side of charcoal grill. Sprinkle each burger with 1 tbsp cheese. Close lid and cook until cheese melts, about 1 minute.
  • Build burgers with muffins, lettuce, tomato slices, patties, remaining barbecue sauce, and onion rounds.
  • Serving size: 1 burger
