Our healthy version of this Italian classic is a guaranteed family hit. Use a high quality Parmesan cheese for the best flavor. Serve it with roasted broccoli and whole wheat spaghetti on the side.

3 spray(s) Olive oil cooking spray
1 pound(s) Uncooked boneless skinless chicken breast(s) four 4-oz pieces
2 item(s) Egg white(s) lightly beaten
0.5 cup(s) Dried plain breadcrumbs
1 Tbsp Italian seasoning
0.5 tsp Table salt or to taste
1 tsp Olive oil
1.5 cup(s) Canned tomato sauce
0.5 cup(s), shredded Part-skim mozzarella cheese
2 Tbsp Grated Parmesan cheese
1 Tbsp Basil

Steps:

  • Preheat the oven to 350°F. Coat a large baking pan with cooking spray.
  • Place the chicken between two sheets of wax paper; using a rolling pin, pound the chicken to 1/4-inch thickness.
  • Place the egg whites in a shallow bowl. In another shallow bowl, combine the bread crumbs with Italian seasoning and salt. Dip the chicken in egg whites; turn to coat. Then dip the chicken in the bread crumb mixture; turning to coat it thoroughly.
  • Coat a large skillet with cooking spray and add oil; heat over medium-high heat. When hot, add the chicken and cook until it's lightly browned and no longer pink in the center, about 4 minutes per side (cook the chicken in batches, if necessary).
  • Pour 1/2 cup of sauce into the prepared baking dish; place the chicken in the pan in a single layer. Pour the remaining sauce evenly over the chicken; sprinkle with both cheeses. Bake until chicken is cooked through and cheese is bubbly, about 25 minutes. Garnish with basil.
  • Serving size: 1 piece of chicken.

The Best Chicken Parmesan recipe, made a bit healthier! Breaded chicken cutlets are baked, not fried yet the chicken is so moist and full of flavor.

4 chicken breasts (about 8 oz each, sliced in half lengthwise to make 8)
3/4 cup seasoned breadcrumbs (I used whole wheat, you can also use GF crumbs)
1/4 cup grated Parmesan cheese
2 tbsp butter (melted (or olive oil))
3/4 cup reduced fat mozzarella cheese (I used Polly-o)
1 cup marinara or Filetto di Pomodoro
cooking spray

Steps:

  • Preheat oven to 450°F. Spray a large baking sheet lightly with spray.
  • Combine breadcrumbs and parmesan cheese in a bowl. Melt the butter in another bowl. Lightly brush the butter onto the chicken, then dip into breadcrumb mixture.  Place on baking sheet and repeat with the remaining chicken.
  • Lightly spray a little more oil on top and bake in the oven for 25 minutes.
  • Remove from oven, spoon 1 tbsp sauce over each piece of chicken and top each with 1 1/2 tbsp of shredded mozzarella cheese.
  • Bake 5 more minutes or until cheese is melted.
