A deliciously crisp and buttery, nut allergy-friendly peanut butter cookie!

160 g butter, (softened)
135 g light brown sugar
90 g golden caster sugar
1 tsp vanilla extract
1 large egg
170 g plain flour
½ tsp bicarbonate of soda ((baking soda))
145 g Wowbutter ((soya spread))
100 g chocolate chips

Steps:

  • Preheat the oven to 180°C (356°F) fan
  • Place the butter, Wowbutter, sugar, and vanilla extract in a large mixing bowl and use an electric mixer/stand mixer to combine the ingredients until light and fluffy
  • Add the egg and beat again until well combined
  • Add the flour, bicarbonate of soda, and chocolate chips and mix until a dough forms
  • Use a tablespoon to scoop the dough into balls and place on a baking tray lined with greaseproof paper. Leave plenty of space between each cookie to allow spreading. You'll need to bake in multiple batches.
  • Bake for 13-15 minutes
  • Remove from the oven and allow to cool for around 10-15 mins before transferring to a cooling rack.

6 tablespoons maple syrup
1 egg, beaten

Steps:

  • 1. Preheat the oven to 375?F. 2. Combine the ingredients in a bowl and stir until thoroughly mixed. 3. Dollop about one tablespoon of batter per cookie on a greased cookie sheet. 4. Bake for 15 to 20 minutes, until golden brown. Remove the cookies from the cookie sheet with a spatula and let them cool on a wire rack before serving.
