150g pack medium egg noodle
1 tbsp vegetable oil
2.5cm piece fresh ginger, finely chopped
2 garlic cloves, finely chopped
1 large carrot, cut into matchsticks
1 yellow pepper, deseeded and thinly sliced
100g mangetout, sugarsnaps or frozen peas
2 spring onions, finely chopped
85g beansprout (optional)
2 tbsp soy sauce
1 tsp white wine vinegar

Steps:

  • Cook the noodles according to pack instructions.
  • Meanwhile, heat the oil in a wok or large frying pan, then stir-fry the ginger, garlic, carrot, pepper and mangetout, sugar snap or frozen peas over a high heat for 2-3 mins.
  • Drain the noodles thoroughly, add to the pan with the onions and beansprouts, if using, then stir-fry for 2 mins.
  • Mix together the soy sauce and vinegar, stir into the pan, then cook for 1-2 mins. Divide between individual plates or bowls and serve immediately.

Number Of Ingredients 15

¼ cup of soy sauce
¼ cup of ketchup
1 tablespoon of sesame oil
2 tablespoons of sambal or sriracha
2 tablespoons of dark brown sugar
2 of ramen spice packets
2 tablespoons of cooking oil
½ of pound meat or seafood
4 of cloves garlic, thinly sliced
1 of serrano chili, thinly sliced
2 cups of leafy greens, frozen or fresh, mustard greens, spinach, kale, or cabbage
2 of packs instant ramen noodles
1 of bunch scallions, cut in ½ inch tubes
5 of sprigs cilantro, leaves diced, stems chopped
1 of lime, cut in half

Steps:

  • In a mixing bowl, combine all ingredients for sauce and mix thoroughly. Set aside. 
  • In a hot wok, add oil and brown your meat. 
  • Add garlic and chilis. Stir fry for 1 minute.
  • If you are adding additional ingredients, add them next. 
  • Add mustard greens. Stir fry for 3 minutes. 
  • Remove from heat and set aside.
  • In a separate pot, bring water to a boil. 
  • Boil ramen noodles to packet specifications. Usually, 4-5 minutes for al dente.
  • When noodles have 1 minute left to boil, turn wok back on to high heat and add scallions. 
  • Remove noodles from water, drain thoroughly, and add too wok. Stir fry for 2 minutes.
  • Add sauce and stir fry for additional 2 minutes. 
  • Remove from heat, add cilantro, and a squeeze ½ of lime over top. 
  • Serve immediately with lime wedges.

Add the noodles, cabbage, onion, tomato, and the oyster sauce mixture and stir-fry until the noodles are heated through and the sauce is absorbed, about 3 minutes.   • To Prep Blanch the dried vermicelli, egg noodles, tofu puffs and bean sprout separately and set aside. To Cook Heat up a wok and add the cooking oil.
