BONNIE’S WINGS FROM THE OVEN | Just A Pinch Recipes image

This is one of those moments of inspiration that just comes together an hour before dinner time. These wings were really good, and simple to prepare. Easy cleanup, too! No turning during cooking. Great plain or dipped in barbecue sauce or ranch dressing. They are tender, moist, and delicious! This may be my go-to wing recipe. I can't wait to experiment with flavors!

22 to 24 chicken wings
1/4 cup peanut oil
1 tablespoon tajin seasoning
1 teaspoon hungarian paprika
1 teaspoon garlic powder
1 teaspoon black pepper

Steps:

  • PREPARE WINGS Remove the wing tips and prepare the wings for baking by cutting the wing at the joint. Rinse and pat the wings dry with paper towels.
  • COOKING DIRECTIONS Add the 1/4 cup peanut oil to a large mixing bowl, big enough to hold all the wings, and add the 1 tablespoon Tajin seasoning, 1 teaspoon garlic powder, 1 teaspoon black pepper, and 1 teaspoon Hungarian paprika. Whisk until well combined. Add the prepared wings and mix thoroughly until all wings are totally covered with the mixture.
  • PREPARE THE PAN AND RACK Line a large sheet pan with parchment paper. Insert a rack in the pan on top of the parchment paper and spray it with kitchen spray. Place the wings on the rack so they are not touching. You are now ready to bake them
  • OVEN INFO Preheat oven to 425 degrees. Bake the wings for 45 to 50 minutes. It takes exactly 45 minutes in my oven. Watch carefully that they do not burn at the end of cooking time. (No need to turn if you use a rack.) Enjoy!

Enjoy crackly and crunchy bites of fried chicken wings, served alongside a sweet-spicy apricot dipping sauce, to yield a mouthwatering game day snack!

1 cup apricot jam
1 medium garlic
1 tsp crushed red chili flakes
½ cup chicken broth
3 tbsp peanut butter
1 tbsp soy sauce
2 tbsp chopped fresh cilantro
kosher salt
1 tbsp chopped peanuts
4 cups peanut oil
24 chicken wings

Steps:

  • To make dipping sauce: In a medium saucepan over medium-low heat, bring apricot jam to a low simmer, 3 to 5 minutes
  • Add garlic, chili flakes, and broth
  • Increase heat to medium and allow mixture to simmer until thickened, about 5 minutes
  • Add peanut butter, soy sauce, and cilantro
  • Cook 3 to 5 minutes more, until sauce reaches consistency of a thick dip
  • Remove from heat; season with salt if desired
  • Serve warm or at room temperature in a heatproof serving bowl
  • Garnish with peanuts and extra cilantro
  • To make chicken wings: In an electric skillet or large frying pan with a deep-fry thermometer, heat 2 to 3 inches of peanut oil to 375 degrees
  • Meanwhile, preheat oven to 175 degrees and line a baking sheet with paper towels
  • Place about 1/3 of chicken wings in oil and fry, turning occasionally, until deep golden brown, 7 to 10 minutes
  • Place fried chicken wings on prepared baking sheet; sprinkle with salt to taste (about 1/2 teaspoon for 8 wings) and place in oven to keep warm while preparing rest of wings
  • Remove all from oven, and serve warm with dipping sauce
