1 lb chicken wings (cleaned
skinned
rinsed with cold water. drained)
2 cups oil for deep frying
Salt to taste
¼ cup all-purpose flour or cornstarch
½ tsp garlic powder
1 tsp coarsely ground black pepper
3 cloves garlic (minced)
½ cup chopped onion. 2 large potatoes (washed
peeled
and cut into strips)
Salt to taste
2 cups oil for deep frying. 3 tbsp tomato paste
½ cup ketchup
2 garlic cloves (minced)
1 tsp about cayenne pepper or to taste
2 tsp sugar or honey.

Steps:

  • Combine all ingredients in a large zip lock bag or sealable bowl, mix until well blended. Add the chicken wings to the mixture, then shake or stir to coat evenly. If you are using a zip lock bag, close it and put it into the fridge for at least 30 minutes, or the preferred overnight time is one day before cooking them to make it more delicious. For those who prefer a shorter period of waiting, you can also skip this step especially. If you don't have enough time but if ever, make sure that you put the marinated chicken wings back into the fridge once done with frying (for future use). Prepare your deep fryer for frying the marinated chicken wings. Once the oil is hot enough, fry a batch of the chicken wings for about 5 to minutes or until it turns brown and crispy, then drain with paper towels. Repeat this process for other batches.
  • In a small saucepan, combine all ingredients from the Sauce part and simmer over medium heat, stirring from time to time until thoroughly cooked at low heat temperature. Keep stirring so it won't stick on your pan or scorch. You can also lower the flame if needed after every 2-3 minutes of cooking time (it takes around 12 to 15 minutes). It would help if you cooked this first before you put it together with fried chicken wings. Heat the oil at 350 degrees F (175 degrees C) in a deep fryer or pan. Fry the potatoes for about 5 minutes until they turn brown, then take them out with a filter or paper towel for draining excess oil. Put the french fries back into the fryer while it's hot and lower the heat temperature to 200 degrees F (93 degrees C). Cook again for 12-15 minutes or, whether crunchy or soft, depending on what texture you like best. Make sure that once done cooking, put in paper towels again to absorb any unwanted oil from frying them twice the time already. Once thoroughly cooked, your french fries are ready to top with the sauce you made earlier, then serve. 12 small chicken wings
¼ teaspoon seasoned salt, or to taste
1 cup all-purpose flour
1 teaspoon coarse salt
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper
¼ teaspoon paprika
1 (12 fluid ounce) bottle Buffalo wing sauce (such as Frank's®), or to taste
2 quarts vegetable oil for frying

Steps:

  • Season chicken wings lightly with seasoned salt.
  • Mix flour, salt, black pepper, cayenne pepper, and paprika together in a wide, shallow bowl. Press wings into flour mixture to coat and arrange onto a large plate so they do not touch. Refrigerate coated wings for 15 to 30 minutes.
  • Dredge wings again in flour mixture and return to the plate. Refrigerate wings again 15 to 30 minutes.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Fry chicken wings in hot oil until crisp and no longer pink at the bone and the juices run clear, 9 to 12 minutes. An instant-read thermometer inserted into the thickest part of the meat, near the bone should read 165 degrees F (74 degrees C).
  • Transfer fried wings to a large stainless steel bowl. Drizzle sauce over the wings and toss to coat.
