Steps:
- Heat about 4 inches of oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Fry pork belly squares in batches until golden brown, about 5 minutes. Drain on paper towels.
- Heat about 4 inches of oil in another large saucepan to 425 degrees F (218 degrees C).
- Fry pork belly squares in batches a second time until skin "pops," 30 seconds to 1 minute. Drain on fresh paper towels.

Steps:
- Combine all seasonings for the cajun seasoning in small bowl. (Or substitute 3/4 cup of prepared cajun seasoning.)
- Heat oil in your deep fryer to 370 degrees. Pat the wings dry and season with salt and pepper. Place them in a single layer in the deep fryer basket and fry for 12 minutes, until golden brown and cooked though. Place on a paper towel-lined plate to drain.
- Melt the butter in a medium saucepan over medium low. Add the cajun seasoning and stir until mixture is the consistency of wet sand. Add the fried chicken wings and toss well, until covered in seasoning. Serve with ranch or blue cheese.
