ROAST PORK SHOULDER - PERNIL ASADO TRADITIONAL RECIPE ...

Roast Pork Shoulder - Pernil Asado Traditional Recipe ... image

Chef Jose Enrique’s version of the Puerto Rican classic pernil asado is extra-flavorful because he marinates the pork in lime and orange juices, as well as plenty of garlic, before roasting until the meat is caramelized and crispy. It can be carved, shredded or pulled into large pieces for serving. It’s no wonder that pernil is a traditional Christmas dish that’s ideal for family gatherings.

Provided by Jose Enrique

Categories     Pork

Total Time 7 hours 0 minutes

Yield 10

Number Of Ingredients 10

1 cup cilantro leaves (coarsely chopped)
½ cup orange juice (freshly squeezed)
½ cup lime juice (freshly squeezed)
9 garlic cloves (finely chopped)
3 tablespoons oregano (finely chopped)
1 ½ tablespoons extra-virgin olive oil
Kosher salt
Pepper
1 boneless pork shoulder roast with fat cap (5 pounds)
Lime wedges, for serving

Steps:

  • In a large, sturdy resealable plastic bag, combine the cilantro, orange and lime juices, garlic, oregano, olive oil, 2 tablespoons of kosher salt and 1/2 teaspoon of pepper. Add the pork shoulder, seal the bag and turn to coat. Transfer the bag to a large baking dish and refrigerate the pork overnight, turning the bag once or twice.
  • Remove the pork from the marinade and scrape off the garlic and herbs; discard the marinade. Season the pork all over with salt and pepper and transfer to a large enameled cast-iron casserole. Let stand at room temperature for 1 hour.
  • Preheat the oven to 400°. Roast the pork fat side up for 1 hour, until lightly browned. Reduce the oven temperature to 300° and roast for 4 hours longer, until the pork is very tender and the fat cap is crispy; transfer to a carving board and let rest for 30 minutes. Chop the fat cap into bite-size pieces. Carve, shred or pull apart the pork and garnish with the crispy cap pieces. Serve with lime wedges.

ROAST PORK BELLY RECIPE | JAMIE OLIVER RECIPES

Roast pork belly recipe | Jamie Oliver recipes image

An absolute classic – the best pork belly recipes let this wonderful cut of meat speak for itself.

Total Time 3 hours 10 minutes

Yield 6

Number Of Ingredients 10

1.3 kg piece of higher-welfare pork belly
15 g fennel seeds
100 ml olive oil
2 carrots
2 sticks of celery
1 bulb of garlic
2 onions
½ a bunch of fresh thyme
1 bottle of white wine
75 g plain flour

Steps:

    1. Preheat the oven to its highest temperature.
    2. Using a Stanley knife, score the skin down to the meat (try not to cut the meat), making the cuts very close together.
    3. Bash the fennel seeds and a good pinch of sea salt in a pestle and mortar to a powder.
    4. Tip the oil over the top of the scored skin, then sprinkle over the fennel mixture, and rub all over so that everything gets into the scores and down into the meat.
    5. Roughly chop the carrots and celery, then throw these into a roasting tray. Break the garlic bulb up into unpeeled cloves, peel and chop the onions into large wedges, then toss into the tray with the thyme sprigs.
    6. Put the seasoned pork belly on top of the vegetables in the tray, then roast for 10 to 15 minutes, or until the skin starts to bubble and turn golden brown.
    7. Reduce the oven temperature to 170°C/325°F/gas 3, and roast for 1 hour 30 minutes. When the time's up, carefully open the oven door and pour in three-quarters of the wine. Cook for 1 further hour.
    8. Remove the meat carefully from the oven and test to see if it pulls apart easily. If not, cook for a little longer. Allow the meat to rest while you make the gravy.
    9. Put the tray of roasted vegetables directly onto your hob over a medium heat add, add the flour, then stir together until thick. Cook for 1 minute then add in the remaining wine – if you sauce is too thick add a splash more wine or water.
    10. Using a potato masher, mash up the vegetables until you have a delicious thick-looking sauce. Cook for 2 to 3 minutes on a low heat, season to taste, then strain through a sieve into a jug.
    11. Remove the crackling from the top of the belly and break up into pieces, pull the pork belly apart, and serve with the jug of gravy on the side, and a selection of seasonal vegetables.

    1. Preheat your oven to 240ºC/475ºF/gas 9. First, score the skin of the pork in a criss-cross pattern every 1cm/½ inch with a sharp knife, trying not to cut into the meat itself. Mix a little salt with a teaspoon of paprika, the lemon juice and a little olive oil, then rub this over the meat and into the score lines. Put the meat in a high-sided roasting tray and cook in the preheated oven for 30 minutes to start the skin crisping up.
    2. Remove the meat from the oven, turning the heat down to 180ºC/350ºF/gas 4. Take the pork out of the tray and put it to one side, then spoon out half the fat and discard it. Place the tray on the hob, add the onions, whole chillies, chorizo, bay leaves and rosemary with the remaining paprika, and fry gently until the onions are soft. Add all the tomatoes, the beans, garlic, parsley and a wineglass of water to the tray, stirring and scraping up all the lovely sticky bits from the bottom. Place the pork on top, return to the oven and cook for another hour or so or until the skin is crispy and the meat is meltingly tender.
    3. When cooked, remove the pork from the tray and allow to rest. Taste the sauce and season with salt, pepper and a few swigs of red wine vinegar to give it a twang. Then remove the chillies and control the heat by chopping up as much chilli as you like and stirring it back into the sauce. Lovely served with soured cream.

ROAST PORK LO MEIN RECIPE | EPICURIOUS
Lo mein is a noodle dish that often is confused with chow mein, and many Chinese restaurants further the confusion by using the two names interchangeably. The dishes are similar, both featuring noodles mixed with stir-fried meat and vegetables and a savory sauce. But whereas chow mein refers to parboiled and stir-fried noodles, lo mein refers to noodles that are fully cooked separately and quickly tossed with sauce in the wok. The roast pork in this recipe is char siu, the same gorgeous reddish-brown pork often displayed and sold in Chinatown shop windows. Instead of buying the pork ready-made, you can also roast your own at home. For the egg noodles, you can use any that are thin and round; spaghetti will also work.
