1 cup sliced celery
1 cup peeled, coarsely shredded carrot
1 cup chopped onions
3 tablespoons Gold Medal™ All-Purpose Flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried thyme leaves, if desired
2 1/2 cups Progresso™ Chicken Broth
1 can (15 oz) cooked wild rice
1 cup half-and-half
1/4 cup slivered almonds, toasted
2 tablespoons chopped fresh Italian (flat-leaf) parsley

Steps:

  • In 4-quart saucepan, melt butter over medium-high heat. Add celery, carrot and onions; cook 3 to 5 minutes, stirring occasionally, until tender.
  • Stir in flour, salt, pepper and thyme; cook and stir 1 minute. Stir in broth and wild rice. Heat to boiling, stirring frequently. Reduce heat to low; cover and simmer 5 minutes, stirring occasionally.
  • Stir in half-and-half; heat just to a simmer (do not boil). Top with almonds and parsley.

A healthy wild rice soup recipe made with butternut squash, kale and white beans. This Slow Cooker Wild Rice Soup is a vegetarian and vegan crockpot soup recipe.

1 medium onion (chopped)
1 cup wild rice or wild rice blend (uncooked) (the cook time listed on the package should be about 45 minutes, rinsed and drained)
1 medium butternut squash (peeled, seeded and cut into ¾-inch pieces (about 4 cups))
15 ounce can white beans (I used cannellini, rinsed and drained)
4 ribs celery (chopped)
½ teaspoon dried oregano
½ teaspoon dried thyme
½ teaspoon garlic powder
½ teaspoon salt
1/8 teaspoon black pepper
1 bay leaf
6 cups low sodium vegetable broth
6 cups chopped kale (or fresh spinach, optional)

Steps:

  • Add all ingredients to the slow cooker except for the broth and kale.
  • Pour the broth into the slow cooker, and gently stir to combine.
  • Cook on low setting for about 6 hours, or on high setting for about 3 ½ hours, until the rice is cooked and tender. As all slow cookers vary, cooking time may be different in your slow cooker compared to mine. Near the end of the cook time, check to see if the rice is done. Once the rice is tender, the soup has cooked long enough.
  • Remove the bay leaf.
  • Stir kale into soup. Serve.

Making creamy soups in the slow cooker can be tricky because it’s not possible to simmer them with the top off and reduce the liquid. One easy way to thicken without reducing is to use a roux, a mix of flour and butter. Heat the roux in the microwave, then whisk it into the stock in the slow cooker before adding the other ingredients. (If you don’t have a microwave, simply melt the butter in a small saucepan, stir in the flour, let it bubble, then proceed.) This soup is best prepared on the high setting for two reasons: First, when cooked on low, the wild rice becomes too soft before the mushrooms are tender. Second, the roux doesn’t thicken as effectively on low. If you need a longer cook time, omit the rice, put the soup on low for 8 hours, and turn the heat up to high before serving.   • Season the chicken with 1 teaspoon each salt and pepper. Add the olive oil to a 6- or 8-quart Instant Pot and set to sauté. Working in batches, add the chicken to the pot and cook until browned, 21⁄2 to 3 minutes per side. Remove the chicken to a plate. Add the celery, carrots, garlic, onion, rosemary, sage and thyme to the pot and cook, stirring, for 1 minute. Add the wine and stir, scraping up the bottom of the pot. Cook until the wine is reduced by at least half, about 2 minutes. Add the broth, rice and 1⁄2 cup water and stir. Add the chicken and any juices from the plate; add the bay leaf. Put on and lock the lid, making sure the steam valve is in the sealing position. Set to pressure-cook on high for 25 minutes. After the time is up, carefully turn the valve to the venting position and let the steam release. Unlock and remove the lid, being careful of any remaining steam. Remove the chicken from the pot and shred with two forks in a bowl. Meanwhile, in a small bowl, mash together the butter and flour with a fork to make a paste. Return the chicken to the pot. Add the butter mixture, stirring to thicken. Set the Instant Pot to sauté. Add the kale and cook 2 minutes. Stir in the half-and-half and bring to a simmer, then press cancel. Just before serving, remove the bay leaf, add the lemon juice and stir. Season with salt and pepper.
