100% Whole Wheat Pancakes Recipe | Allrecipes image

These come out very light and fluffy and are full of whole grain. My kids love them! If you like blueberries, throw a few on top before flipping the cake :)

2 cups whole wheat flour
2 tablespoons white sugar
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
2?¼ cups buttermilk
2 eggs
3 tablespoons vegetable oil

Steps:

  • Whisk whole wheat flour, sugar, baking powder, baking soda, and salt in a bowl. Whisk buttermilk, eggs, and vegetable oil in a separate bowl; pour buttermilk mixture into dry ingredients. Stir just until combined (batter may seem a bit thick).
  • Heat a cast iron skillet over medium-low heat for 5 minutes. Pour 1/3 cup of batter onto hot skillet and use a spoon to spread the pancake a bit. Cook until browned and bubbles appear on top, 1 1/2 to 2 minutes. Flip and cook until browned and set in the middle, about 2 more minutes. Repeat with remaining batter.

These filling, fibre-rich, little wholemeal pancakes make a comforting weekend breakfast. Serves 4. Prep time: 20 minutes

Number Of Ingredients 1

  • 115g wholemeal flour
  • ½ teaspoon baking powder
  • 1 egg
  • 210ml semi-skimmed milk
  • 1 teaspoon sunflower oil
  • 160g mixed berries

Steps:

    1. Put the flour and baking powder into the mixing bowl and use the back of a spoon to push it out to the edges to make a well in the middle.
    2. Crack the egg into the middle of the bowl and slowly add the milk, stirring the mixture together as you do it until it becomes a smooth liquid.
    3. Heat a small drop of oil in a frying pan on the hob and then spoon three tablespoons of pancake batter into the pan to make three small pancakes.
    4. Let the pancakes cook for about a minute until they are turning brown, flip them over using a fish slice and then cook them for about another minute.
    5. Use the fish slice to take the pancakes out of the pan and repeat with the rest of the mixture. Top with the mixed berries and serve.

Additional note: you can substitute applesauce for the oil (use the same amount) and they turn out exactly the same with a lot less calories.
