GRANDMA CORNISH'S WHOLE WHEAT POTATO BREAD RECIPE | ALLRECIPES

Grandma Cornish's Whole Wheat Potato Bread Recipe | Allrecipes image

This is the recipe that my husband's grandmother made for her family, my mother-in-law made for hers, and I have inherited the fun of making this bread for mine. We particularly like this fresh out of the oven, and then eat it daily for breakfast. My father-in-law at 86 years old bragged about never having eaten a slice of 'store bought bread.'

Yield 4 loaves

Number Of Ingredients 11

1 medium potato, peeled
2 cups water
1 teaspoon salt
? cup white sugar
? cup shortening
1 tablespoon salt
6 cups warm milk
3 (.25 ounce) packages active dry yeast
½ cup warm water (110 degrees F/45 degrees C)
1 teaspoon white sugar
15 cups whole wheat flour

Steps:

  • Dissolve yeast and 1 teaspoon sugar in 1/2 cup warm water.
  • Boil one medium peeled potato in 2 cups water with 1 teaspoon salt. Mash the potato in a medium bowl, while reserving the water. Combine the mashed potato, potato water, 1/3 cup of sugar, shortening or oil, 1 tablespoon salt, and milk in a large bowl.
  • Make sure the milk mixture is warm, and add the yeast. Stir in 15 cups of whole wheat flour.
  • Turn dough out onto a lightly floured surface. Knead for about 10 minutes. Place in greased bowl, and turn to coat the surface. Cover with a damp cloth, and allow to rise until doubled. Rising time will be about 1 1/2 hours. Punch down, and knead again for 3 minutes. Place back in bowl, and allow to rise again until doubled. The second rising period should be about 1 hour. Punch down. Form 4 loaves, and place into 9 x 5 inch greased bread pans. Let dough rise again for 30 - 60 minutes.
  • Bake at 325 degrees F (165 degrees C) for 1 hour.

WHOLE WHEAT POTATO BREAD (BREAD MACHINE) RECIPE - FOOD.COM

Whole Wheat Potato Bread (Bread Machine) Recipe - Food.com image

This is a true sandwich bread - soft and fluffy. No bricks here. For the potatoes, you can use leftover mashed potatoes or just cook a couple and mash with a fork. I like to make enough potatoes to last for a whole week of breadmaking. If you have it, use your leftover potato water in place of the regular water. You can bake this in the oven, just follow any standard bread-making procedure. I sometimes substitute 1/2 cup ground oatmeal or ground 7-grain flakes for 1/2 cup of the wheat flour. If you are grinding your own wheat, grind it coarsely for a less dense loaf.

Total Time 4 hours 15 minutes

Prep Time 15 minutes

Cook Time 4 hours

Yield 1 loaf, 12-16 serving(s)

Number Of Ingredients 9

1 cup very warm water
3 tablespoons olive oil
3 tablespoons honey
1 egg
1 cup mashed potatoes
1 1/2 teaspoons salt
3 cups whole wheat flour
1 tablespoon vital wheat gluten (optional)
2 teaspoons yeast

Steps:

  • Add the ingredients to the breadmaker in the order given or per your machine's instructions. Do not mix the ingredients, just layer them. Make a depression in the top of the flour to hold the yeast.
  • Depending on how wet your mashed potatoes are, the recipe may take up to 1/8 cup less water. So, watch it carefully after it has been mixing for awhile and add more flour or water as needed. It should be a soft, formed ball that is not sticky.
  • Use the whole wheat setting on your bread machine.
  • Enjoy!

VEGAN POTATO BREAD - FORKS OVER KNIVES
This potato bread is so good that you’ll want to bake two loaves at a time. Use it to create delicious veggie sandwiches, bread pudding, or simply enjoy a slice with some homemade vegan butter. Be sure to let the bread cool completely (about 1 hour) before slicing it, as this creates the best texture and allows flavors to fully develop. Tip: For easy freezing and to prevent stuck-together bread slices, cut several pieces of parchment or waxed paper the size of a slice of bread. Place a piece of paper between each slice and freeze in an airtight container.

WHOLE WHEAT POTATO BREAD - A TREATS AFFAIR
Mar 11, 2012 · Potatoes keep the bread soft and moist longer. Whole wheat bread is usually heavy and dense. Most of the recipes I used before were calling for just about 1 cup of mashed potatoes. I was afraid if I stick with one cup mashed potatoes and use only whole wheat flour, my bread will be heavy and far from being the soft and moist potato bread I wanted.
