These yummy bagels can be made starting in the bread maker and are so simple you will wonder why you haven't been making your own bagels all along.

Number Of Ingredients 9

1 cup water
2 tablespoons honey
4 teaspoons vital wheat gluten
1 teaspoon salt
1?¾ teaspoons yeast
3 cups whole wheat flour
1 tablespoon cornmeal
2 tablespoons white sugar
1 egg white

Steps:

  • Place water, honey, vital wheat gluten, salt, yeast, and whole wheat flour in the bread maker in that order. Select "Dough" setting. Let the bread maker work, about 2 hours.
  • Remove finished dough from bread maker and punch it down on a lightly floured surface. Cut the dough into 8 equal-sized sections and pat into balls. Push a thumb through each ball to make a hole; shape the bagels as round as possible. Place on a plate and cover with a clean towel; let rest for 15 minutes.
  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with a clean towel. Sprinkle a separate baking sheet with cornmeal.
  • Bring a large pot of water to a boil; add sugar. Add bagels to the water, 2 at a time. Boil for 1 minute, turning them over halfway through. Remove bagels from the water with a slotted spoon and drain on the towel-lined baking sheet.
  • Transfer bagels to the prepared baking sheet. Brush bagels with egg white.
  • Bake in the preheated oven until browned, 15 to 20 minutes. Transfer to a cooling rack.

Whole wheat flour absorbs more moisture than regular white flour - so I adjusted my usual ratio of yogurt to flour for these bagels.

For the dough:, 1 cup FAGE non-fat Greek yogurt, 1 cup whole wheat flour (I use Bob's Red Mill Stoneground Whole Wheat), 1 1/2 tsp baking powder, 1/2 tsp salt,, Other items:, 1 egg scrambled with a sprinkle of salt (used as a wash before and after the bagels are baked), Sesame Seeds

Steps:

  • <p>Preheat oven to 425.</p> <p>Line a large baking sheet with parchment paper.</p> <p>Prepare the dough:</p> <p>Mix the flour, baking soda and salt in a bowl.</p> <p>Add the yogurt and mix to combine.</p> <p>Be sure the yogurt and flour are compeltely incorporated.</p> <p>Cover the dough with plastic wrap and allow it to rest approximately 30 minutes.</p> <p>Place the dough on a lightly floured surface.</p> <p>Divide the dough in 4 pieces.</p> <p>Roll each piece into a log approximately 7 inches long.</p> <p>Form the log into a bagel shape, overlapping the end pieces.</p> <p>Pinch the seams shut.</p> <p>Repeat for all 4 pieces of dough.</p> <p>Place them on the parchment lined baking sheet.</p> <p>Generously brush each bagel with the egg wash</p> <p>Sprinkle each bagel with seeds.</p> <p>Bake for about 25 minutes or until golden brown.&nbsp;</p> <p>As soon as the bagels come out of the oven brush them with the egg wash again. You do not need to put the bagels back in the oven after you brush them with egg wash. It's such a thin coat of egg, it will cook on the hot bagel.</p> <p>Allow them to cool at least 30 minutes before serving.</p> <p>&nbsp;</p>
