Rustle up some sweet potato wedges as a super-simple snack or side dish. They only require three ingredients and are sure to be a hit with the whole family

Number Of Ingredients 3

2 sweet potatoes
2 tbsp olive oil
1 tbsp finely chopped fresh thyme or rosemary

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Cut off and discard the ends of the potatoes, halve, then cut each half into long wedges.
  • Tip the wedges onto a large baking tray. Drizzle over the oil, sprinkle over the thyme or rosemary and plenty of seasoning, then toss to coat.
  • Cook in the oven for 15 mins, then turn the wedges over and cook for 15 mins more until golden and tender. Serve.

Happy Thanksgiving! Here is our delicious yet totally healthy vegan Sweet Potato Pie.

Prep Time 20 minutes

Cook Time 40 minutes

Number Of Ingredients 4

 
Crust:1 cup almond meal1 cup unsweetened coconut1 cup dates
Filling:2 lbs cooked sweet potato3/4 cup coconut milk1 cup dates2 Tbsp lime juice2 tsp cinnamon1 tsp ginger1/2 tsp allspice1 1/2 Tbs arrowroot powder
Cashew Cream:2 cups raw, unsalted cashews6 dates1 cup water1/2 tsp vanilla

Steps:

  • Mix crust ingredients in a food processor until mixture sticks together.
  • Press into a pie plate.
  • Bake at 350 for 10 minutes.
  • Next, mix together the filling ingredients in a high speed blender or food processor until mixture is smooth and creamy.
  • Pour on top of crust.
  • Bake at 350 for 40 minutes.
  • While this is baking you can make the Cashew Cream.
  • Mix ingredients in blender until smooth and creamy.
  • Once the pie is out of the oven let it cool for half and hour and then top it with your Cashew Cream.
