Number Of Ingredients 6

2 ¼ cups whole wheat pastry flour
1 tablespoon sugar or maple syrup (see notes)
½ teaspoon salt
2 sticks unsalted butter
5 tablespoons cold water
1 tablespoon vinegar

Steps:

  • In a food processor, pulse the flour, sugar, salt and butter into the texture of little peas— you don’t want the butter all mixed in!
  • Mix in the cold water and vinegar. Pulse until the dough forms a ball.
  • Divide the ball into two balls, flatten each ball slightly, then wrap in waxed paper and place in a zippered bag.
  • Chill for 30 minutes in the refrigerator.

Number Of Ingredients 3

Crust: 2 cups almonds1/2 cup dates1/2 cup raisins2 Tbsp flax meal1/4 cup water
Filling:2 cups dates2 cups hot water2 Tbsp peanut butter1/2 cup chopped pecansjuice of 1/2 lemon2 tsp arrowroot powder
Topping:1-1/2 cups pecan halves

Steps:

  • Preheat oven to 350°
  • Mix crust ingredients in a food processor until mixture sticks together.
  • Press into a 9 inch pie plate
  • Bake for 5 - 10 minutes
  • Blend filling ingredients in blender until smooth
  • Pour into crust
  • Top with pecan haves in a circle starting from the center
  • Bake for 35 minutes.
