Dashi is a basic stock used in Japanese cooking which is made by boiling dried kelp (seaweed) and dried bonito (fish). Instant dashi granules are sold in conveniently-sized jars or packets and vary in strength. Add more dashi to your soup if you want a stronger stock. You can use yellow, white or red miso paste for this soup. Yellow miso is sweet and creamy, red miso is stronger and saltier.

2 teaspoons dashi granules
4 cups water
3 tablespoons miso paste
1 (8 ounce) package silken tofu, diced
2 green onions, sliced diagonally into 1/2 inch pieces

Steps:

  • In a medium saucepan over medium-high heat, combine dashi granules and water; bring to a boil. Reduce heat to medium, and whisk in the miso paste. Stir in tofu. Separate the layers of the green onions, and add them to the soup. Simmer gently for 2 to 3 minutes before serving.

Miso soup is a Japanese soup made with dashi, stock, miso paste and often consists of wakame seaweed, cubed tofu, and chopped scallions. The soup is deeply flavorful, has many health benefits, and warms up inside out.

4 cups dashi (Japanese soup stock)
1/4 cup miso
2 tablespoon dried wakame
8 oz silken tofu
2 green onions (green parts only)
1 teaspoon soy sauce (optional)
1 teaspoon mirin (optional)

Steps:

  • Gather ingredients.
  • Reconstitute wakame in a bowl with water, about 5 minutes.  Drain and squeeze out excess water.  
  • Cut tofu into cubes.
  • Chop green onions.
  • In a small bowl, mix miso with ½  cup of dashi and set it aside.  
  • On a stove top, heat dashi in a medium soup pot.  When it’s hot, add miso mixture. Make sure miso dissolves completely.  Taste and add more miso if necessary.  Note: if using miso with soybean pieces, strain and dissolve the miso by placing a fine shiver over dashi.  
  • Add tofu, wakame, and green onions.  Season to taste with soy sauce and mirin (optional).  
  • Serve hot.
