2.667 cups floury potatoes (peeled)
2 tablespoons olive oil
1 clove garlic (finely chopped)
3.333 cups white fish fillets (skinned, ready to cook, e. g. cod, pollack, diced)
0.25 cup dry white wine
0.25 cup double cream
2 tablespoons parsley (chopped)
6 tablespoons butter (half melted)
9 ounces Puff pastry

Steps:

  • Heat the oven to 180°C (160°C in a fan oven), 350F, gas 4 and line a baking tray with grease-proof paper.
  • Cook the potatoes in boiling salt water for around 25 min. Drain, leave to cool and mash.
  • Heat the oil in a pan and fry the garlic. Add the fish and fry for a few minutes. Deglaze with the wine and the cream. Season with salt and ground black pepper and simmer on a medium heat for 3-4 minutes. Remove from the heat, leave to cool and stir in the the mashed potatoes along with the parsley and 3 tbsp butter.
  • Brush the puff pastry sheets with some melted butter and place them on top of each other. Place the fish and potato mixture in a long line on top of the pastry. Fold over the pastry, wrap up and place on the prepared baking tray. Brush with the remaining butter and bake for 30-40 min until golden brown.

2 1/2 cups flour
3/4 teaspoon salt
1/2 cup very cold butter
1/2 cup very cold margarine
2 teaspoons lemon juice or 2 teaspoons white vinegar
1 egg
ice cold water

Steps:

  • Put flour and salt in the bowl of a food processor and pulse a few times to mix well.
  • With the motor OFF, cut in the cold butter and margarine.
  • Pulse until the fats are in about 1/4 inch pieces.
  • Put the lemon juice OR vinegar and the egg, beaten into a measuring cup and add enough ice water to make 1/2 cup.
  • Start your processor and feed water in a slow stream through the tube.
  • Watch what your doing as you may not need all the liquid, because as soon as the dough begins to gather together stop the machine.
  • The dough does not have to form a ball but it should be soft and silken.
  • Turn dough out onto waxed paper, form into two balls, wrap and chill for 30 minutes.
