3/4 cup good-quality mayonnaise
1/2 teaspoon finely grated lemon zest
2 tablespoons freshly squeezed lemon juice
2 pounds smoked whitefish, skinned, boned and flaked
1 large stalk celery, finely diced
1/2 small red onion, finely diced
Kosher salt and freshly ground black pepper
Bagels, for serving
Pickled Red Onions, for serving, recipe follows
1 cup red wine vinegar
1/4 cup fresh lime juice
3 tablespoons granulated sugar
1 tablespoon kosher salt
1/4 teaspoon coriander seeds
1/4 teaspoon mustard seeds
1/4 teaspoon black peppercorns
1 medium red onion, halved and thinly sliced

Steps:

  • Whisk together the mayonnaise, lemon zest and juice until combined. Add the whitefish, celery and onions, and gently mix until combined; season with salt and freshly ground black pepper. Cover and refrigerate for at least 1 hour before serving.
  • Serve with bagels and Pickled Red Onions.
  • Combine the vinegar, lime juice, sugar, salt, coriander seeds, mustard seeds and peppercorns in a small saucepan over high heat. Cook until the sugar and salt is dissolved. Remove from the heat and let cool for 5 minutes.
  • Put the onions in a medium bowl, pour the vinegar mixture over and toss to coat. Cover and refrigerate for at least 1 hour and up to 48 hours before serving.

Smoked whitefish salad is a staple in many Jewish delis and bagel shops, and while excellent purchased versions abound, making your own is a snap. Our recipe is creamy (we add both mayonnaise and crème fraîche) and lightly smoky with a lemony tang and plenty of fresh dill. We also add dill pickle for a hit of acidity and crunch. We like to spread the salad on pumpernickel triangles or bagel chips and top it with thin slices of cucumber, but spreading it on bagels or scooping it over a bed of crunchy lettuce never gets old. Slideshow: More Whitefish Recipes

1 medium shallot, minced
2 tablespoons fresh lemon juice
2 celery ribs, finely chopped
1 medium dill pickle, finely chopped (1/2 cup)
2 tablespoons mayonnaise
2 tablespoons crème fraîche
2 tablespoons chopped dill, plus dill sprigs for serving
1 teaspoon grainy mustard
1/2 teaspoon caraway seeds, lightly crushed with a heavy skillet
8 ounces skinless, boneless smoked whitefish, flaked
Kosher salt
Pepper
Sliced pumpernickel bread and thinly sliced cucumbers, for serving

Steps:

  • In a medium bowl, combine the shallot with the lemon juice and let stand at room temperature for 10 minutes. Add the celery, pickle, mayonnaise, crème fraiche, chopped dill, mustard and caraway seeds, and using a spatula, stir to combine. Fold in the fish and season with salt and pepper.
  • Scrape the salad into a serving bowl. Garnish with dill sprigs and serve with pumpernickel bread and thinly sliced cucumbers.
