8 chicken thighs, skinless and boneless
2 tablespoons olive oil
1/4 cup white wine vinegar
2 tablespoons dry white wine
2 tablespoons lemon juice
1 tablespoon garlic, minced
1 teaspoon Dijon mustard (heaping)
1/2 tablespoon lemon pepper
1/2 teaspoon salt
1/2 teaspoon tarragon
1/2 teaspoon oregano
1/2 teaspoon sweet basil
1/4 teaspoon sugar

Steps:

  • Combine the ingredients in a zip lock bag and add the chicken. Remove all the air and flatten the chicken. Put it on a cookie sheet to keep the chicken flat and freeze.
  • To thaw: Place the chicken in a sink with tempid water and let it sit for 20 - 30 minutes. Once thawed (or almost thawed) remove from the water and place in the fridge. You do not want the chicken to come to room temperature for fear of bacteria setting in.
  • Preheat barbecue.
  • Place the chicken on the barbecue and cook for 12 - 15 minutes or until done.

An easy marinade that's seasoned with Italian herbs and garlic makes this chicken a must at your next backyard cookout.

4 - 6 medium chicken breast halves (2 to 3 pounds total)
1?½ cups dry white wine
½ cup olive oil
1 tablespoon dried Italian seasoning, crushed
2 teaspoons minced fresh garlic

Steps:

  • Remove skin from the chicken, if you like. Put the chicken in a plastic bag set in a shallow baking dish.
  • In a small bowl, stir together the wine with the olive oil, Italian seasoning, and garlic. Pour the mixture over the chicken in a plastic bag. Close the bag. Marinate the chicken in the refrigerator for 8 hours or overnight.
  • Drain chicken, reserving the marinade. In a covered grill, arrange the preheated coals around a drip pan for indirect grilling. Test for medium* heat above the pan. Place the chicken on a grill rack, with the bone side up, over a drip pan. Cover the chicken and grill for 50 to 60 minutes or until the meat is tender and no longer pink, turning once. Brush the chicken once with the reserved marinade halfway through the grilling time.
  • Discard the remaining marinade. Garnish with sprigs of fresh herbs, if you like. Makes 4 to 6 servings.
