White Chocolate Pumpkin Dreams Recipe: How to Make It image

If you like pumpkin pie, you'll love these delicious pumpkin cookies dotted with white chocolate chips and chopped pecans. Drizzled with a brown sugar icing, they're irresistible.

Number Of Ingredients 18

1 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg, room temperature
2 teaspoons vanilla extract
1 cup canned pumpkin
2 cups all-purpose flour
3-1/2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 package (10 to 12 ounces) white baking chips
1 cup chopped pecans
PENUCHE FROSTING:
1/2 cup packed brown sugar
3 tablespoons butter
1/4 cup 2% milk
1-1/2 to 2 cups confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in the egg, vanilla and pumpkin. Combine dry ingredients; gradually add to the creamed mixture and mix well. Stir in chips and pecans. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until firm, 12-14 minutes. Remove to wire racks to cool., For frosting, combine brown sugar and butter in a small saucepan. Bring to a boil; cook over medium heat until slightly thickened, about 1 minute. Cool for 10 minutes. Add milk; beat until smooth. Beat in enough confectioners' sugar to reach desired consistency. Spread over cooled cookies.

A perfect fall chili made with pumpkin puree, ground turkey, white beans, green chili and spices. Top this with chopped fresh cilantro, scallions, jalapeños, or cheddar and serve it with baked chips on the side for a wonderful lunch or dinner.

Number Of Ingredients 16

cooking spray
2 lb 99% lean ground turkey
1/2 tsp olive oil
1 small onion (chopped)
3 garlic cloves (minced)
1 tsp chili powder (to taste)
2 bay leaves
1 1/2 tbsp cumin
1 tsp oregano
2 15 oz cans white northern or navy beans, rinsed and drained
15 oz can pumpkin puree (or homemade)
4.5 oz canned chopped green chile
2 cups low sodium chicken broth (check labels for GF)
kosher salt and pepper to taste
chopped cilantro (red onion or chives for topping)
Greek yogurt or low-fat sour cream for topping (optional)

Steps:

  • Heat a large heavy saute pan over high heat and lightly spray with oil.
  • Add meat and cook, breaking it up until white, about 5 minutes.  Add to crock pot.
  • Add oil to the saute pan, then onions, garlic, sauté about 3 - 4 minutes; add cumin and sauté another minute. Add to crock pot.
  • Add beans, pumpkin puree, green chilis, broth, chili powder, oregano, and bay leaves.
  • Cover and cook on high for 4 hours or low for 8 hours.
  • Remove bay leaves and adjust seasoning to taste before serving. Enjoy!

Make the vanilla icing: In a medium bowl, whisk together the confectioners' sugar, corn syrup, vanilla and a splash of heavy cream. Add more heavy cream as needed, until the glaze is about the consistency of hot fudge. (It's better to err on the thick side.) Set aside. 7. Make the chocolate glaze: In a medium bowl, combine the confectioners' sugar, cocoa powder, melted chocolate, melted butter, corn syrup and a splash of heavy cream. Add more heavy cream as needed until the glaze is smooth and thick, about the consistency of cream cheese frosting. 8. To glaze the cookies, use an offset spatula or butter knife to spread the vanilla glaze over one half of each cookie. Repeat with the chocolate glaze. Let the icing set at room temperature for about 1 hour before serving. The cookies will keep at room temperature, wrapped or in an airtight container, for up to 3 days.
