6 ounces white chocolate chips
1 cup half-and-half
3 cups 1% milk
½ teaspoon vanilla extract

Steps:

  • Combine white chocolate chips and half-and-half in a medium saucepan over medium heat. Stir continuously until chocolate has completely melted, 3 to 4 minutes. Stir in milk and vanilla extract until heated through, 3 to 4 minutes more. Pour into mugs and serve.

Hot chocolate could warm you up on a cold day, but what about those unmercifully cold sub-zero days? This recipe uses a combination of spices and creamy chocolate to create a smooth drink with a lingering warmth. Garnish with a candy cane or cinnamon stick if desired.

3?¼ cups 2% milk
6 ounces white chocolate, chopped
1 egg, beaten
¼ teaspoon cayenne pepper
½ teaspoon ground cinnamon

Steps:

  • Place the white chocolate in a medium metal bowl over a pan of barely simmering water, or in the top half of a double boiler. Allow the chocolate to melt, stirring occasionally until smooth. Stir in cayenne pepper and cinnamon. Whisk in the egg until smooth.
  • Gradually whisk in one cup of the milk until completely incorporated, about 2 minutes. Gradually whisk in remaining milk, and heat until hot, but not simmering. You do not want a skin to form on top of the milk. It will be ready to drink when either the taste of the cayenne is masked by the temperature of the milk (the spiciness of the pepper will remain), or when the hot chocolate is at your desired temperature. Ladle the hot chocolate into mugs and garnish with a sprinkle of cinnamon.

  • Stir in remaining ingredients, until honey and salt are well dissolved. Can make frothy in a blender, or add a portion to a mason jar with a lid, and shake until frothy. I portion out all of it into lidded mason jars using a ladle, refrigerate leftovers, then microwave to heat & shake to get frothy, when ready to serve. This is very rich, but my kid on a very limited intro stage of the SCD in order to treat Crohn’s drinks a lot of this & it helps to keep on weight. I currently will make a double batch & it keeps in the fridge until all of it is used.
