3 (15 ounce) cans no-salt-added Great Northern beans, rinsed and drained
4 cups reduced-sodium chicken broth
1 pound skinless, boneless chicken breast halves
2 cups finely chopped onions
1 ½ cups chopped desired-color sweet peppers
2 4-ounce cans diced green chile peppers, undrained
4 cloves garlic, minced
2 teaspoons ground cumin
1 teaspoon dried oregano, crushed
½ teaspoon salt
¼ teaspoon cayenne pepper
1 ½ cups shredded Monterey Jack cheese (6 ounces)
1 (7 ounce) container Plain fat-free Greek yogurt
1 bunch Fresh cilantro leaves

Steps:

  • In a 4- to 5-qt. slow cooker combine beans, broth, chicken breast, onions, sweet peppers, chile peppers, garlic, cumin oregano, salt and cayenne pepper. Cover and cook on low 4 to 5 hours or high 2 to 3 hours.
  • Remove chicken; shred using two forks. Return shredded chicken to cooker. If desired, top servings with cheese, yogurt and/or cilantro.

1 pound boneless skinless chicken breasts, chopped
1 medium onion, chopped
1 tablespoon olive oil
2 garlic cloves, minced
2 cans (14 ounces each) chicken broth
1 can (4 ounces) chopped green chiles
2 teaspoons ground cumin
2 teaspoons dried oregano
1-1/2 teaspoons cayenne pepper
3 cans (14-1/2 ounces each) great northern beans, drained, divided
1 cup shredded Monterey Jack cheese
Sliced jalapeno pepper, optional

Steps:

  • In a Dutch oven over medium heat, cook chicken and onion in oil until lightly browned. Add garlic; cook 1 minute longer. Stir in the broth, chiles, cumin, oregano and cayenne; bring to a boil., Reduce heat to low. With a potato masher, mash one can of beans until smooth. Add to saucepan. Add remaining beans to saucepan. Simmer for 20-30 minutes or until chicken is no longer pink and onion is tender., Top each serving with cheese and, if desired, jalapeno pepper.
