Creamy whipped Blue Cheese spread

Number Of Ingredients 6

4 oz cream cheese
4 oz Castello® Traditional Danish Blue
4 tbsp extra virgin olive oil
1 pinch fresh cracked pepper to taste
2 tbsp whipping cream
1 to 4 tbsp milk

Steps:

  • 1. Add blue cheese, cream cheese, olive oil and cracked pepper to food processor. Mix until very creamy & smooth. 2. Add in whipping cream & mix well. 3. Add milk until you reach desired consistency. 4. Enjoy immediately or store in refrigerator.

6 ounces crumbled blue cheese
1 (4 ounce) package cream cheese
kosher salt to taste
freshly ground black pepper to taste
? cup heavy whipping cream

Steps:

  • Puree blue cheese and cream cheese together in a food processor until completely smooth; transfer to a bowl and season with kosher salt and black pepper.
  • Beat heavy cream in a glass or metal bowl until soft peaks form. Lift your beater or whisk straight up: the whipped cream will form soft mounds rather than a sharp peak. Fold whipped cream into the blue cheese mixture, stirring until the mixture is creamy with no lumps.
  • Transfer mixture to a pastry bag with a round tip for piping.

  • Preheat oven to 190°C (170°C fan) mark 5. Slice the baguette into 16 x 5mm-thick slices, on a slight diagonal. Discard the ends. Brush the slices on both sides with oil and arrange on a baking tray. Sprinkle over some salt.   Cook for 5min, then turn and cook for 5-7min more until golden and crisp. Cool completely. Meanwhile, using a handheld electric whisk, beat the cream and blue cheeses in a medium bowl until smooth and combined.  Halve, core and finely slice the pear. Spread the whipped cheese mixture on to the crostini and top with slices of the pear (you may not need it all). Arrange on a board or platter. Drizzle over the honey and serve.
