- Heat oven to 350°F. Grease and flour 2 (8-inch) round cake pans. Set aside.
- Combine cake mix, water, 1/3 cup melted butter, and eggs in bowl; beat at medium speed until well mixed. Stir in 3 cups cookie crumbles.
- Divide batter evenly between prepared pans. Bake 27-31 minutes or until toothpick inserted in the center comes out clean. Cool 10 minutes. Remove from pans to cooling rack. Cool completely.
- While cake is cooling, combine melted chocolate, 3/4 cup butter and 1 tablespoon vanilla in bowl; beat at medium speed until creamy. Add powdered sugar, salt, and enough whipping cream for desired spreading consistency, beating at low speed until well mixed. Beat on high 1 minute or until light and fluffy.
- Place 1 cake layer onto serving plate, bottom-side up. Frost top of cake with 1 cup frosting. Place remaining cake layer over frosting, bottom-side down. Frost top and sides of cake. Decorate with remaining cookies as desired.

- Assemble the cake: Place a cake layer on a cake stand or platter. Press half of the remaining cookie dough evenly on top of the cake (it should be about a 1/2-inch-thick layer). Top with the other cake round and then press the remaining cookie dough evenly on top of the cake. Drizzle some of the ganache around the edge of the cake letting it drip down the sides. Drizzle 2 tablespoons of the ganache over the top of the cake. Spread the remaining ganache around the bottom of the cake to make a 1-inch border. Press the mini chocolate chips into the ganache. Decorate the top of the cake with the cookie halves. Chill until the ganache has set, about 20 minutes.
