CRISPY BAKED WONTONS RECIPE: HOW TO MAKE IT

- In a large skillet, cook the pork, turkey and onion over medium heat until meat is no longer pink; drain. Transfer to a large bowl. Stir in the water chestnuts, soy sauce, egg substitute and ginger., Position a wonton wrapper with one point toward you. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Place 2 heaping teaspoons of filling in the center of wrapper. Fold bottom corner over filling; fold sides toward center over filling. Roll toward the remaining point. Moisten top corner with water; press to seal. Repeat with remaining wrappers and filling., Place on baking sheets coated with cooking spray; lightly coat wontons with additional cooking spray. , Bake at 400° for 10-12 minutes or until golden brown, turning once. Serve warm, with sweet-and-sour sauce if desired.
Freeze option: Freeze cooled baked wontons in a freezer container, separating layers with waxed paper. To use, reheat on a baking sheet in a preheated 400° oven until crisp and heated through.

- In a large bowl, mix pork, soy sauce, chives, vinegar, cornstarch, ginger, garlic, red pepper flakes and sesame oil until fully incorporated. Using your finger, wet the edges of wonton wrapper with water. Place half a tablespoon of pork filling in the center of the wonton wrapper. Fold wonton in half diagonally to create a triangle, and seal the edges. Fold the two identical corners in on each other and press again to seal. Repeat until all wonton wrappers are filled. Bring all soup ingredients to a boil. Simmer on low for 10 minutes, then remove ginger and garlic cloves and bring it back to a boil. Lower in wontons and cook for 10 minutes more. Serve into bowls and garnish with green onions.

- Make the duck sauce: in a small bowl, mix apricot preserves, vinegar, soy sauce, and 2 tablespoons hot water until sauce is smooth. Set aside. In a large bowl, stir to combine the cream cheese, crab meat, chives, soy sauce, and garlic powder until it forms a homogenous mixture. In a small bowl, whisk egg and set aside. To form the wontons, place about 1 tablespoon of the crab mixture in the center of a wonton wrapper. Using your finger or a small brush, lightly rub the edges of the wrapper with beaten egg (this will help seal the wontons.) Bring all 4 corners together above the wrapper and pinch to seal, moving your finger down along the edges forming an “X” shape, with the corners meeting in the center. Set aside on a large plate or sheet tray. Repeat until you have used all of the crab mixture. Fill a large heavy-bottomed pot or dutch oven with about 3 to 4 inches of oil and heat to 350°. Working in batches of 4 to 5, add your rangoon to the oil and fry until golden brown, 3 to 4 minutes. Remove the wontons to a paper towel lined plate to drain while you fry the remaining rangoon. Serve immediately with homemade or store bought duck sauce.
