Soy Sauce Pan Fried Noodles (Cantonese Chow Mein) | China ... image

Cantonese comfort dish--soy sauce fried nice also known as soy sauce chow mein.

Number Of Ingredients 13

100 g dried egg noodles ( , thinner ones are better)
1 cup bean sprouts remove the roots ( , cut into sections)
6 blanched chives ( , cut into sections)
3 green onions ( , shredded)
1/4 white onion
3 tbsp. cooking oil (, divided )
pinch of salt ( , if necessary )
1 tbsp. light soy sauce
1 tsp. dark soy sauce
1 tsp. Chinese cooking wine
1 tsp. water
1/4 tsp. sugar
1/4 tsp. ground white pepper

Steps:

  • Bring a large pot of water to a boiling and cook the noodles for 1 minute. During the process, separate the noodles. Transfer the noodles out and drain.
  • In a small bowl, mix all the ingredients of the sauce and set aside.
  • Add around 2 tablespoon of oil in wok and slow down the fire, fry until the noodles becomes dry and crispy. However this is only optional if you want a real Cantonese flavor. You can skip this to make a regular chow mein recipe. Transfer the noodles out.
  • Turn up the fire and add another tablespoon of oil, add onion and the white sections of green onions in.
  • Place noodles back, add blanched chive, spring onions and drizzle the sauce. Mix well. Sprinkle some salt if necessary. Serve immediately.

Chicken breasts are lightly breaded, then baked in a creamy sauce with mushrooms, almonds and celery in this easy but elegant dish that perfect for company or a week night meal.

Number Of Ingredients 12

4-6 boneless, skinless chicken breasts
1/2 cup + 1 tablespoon flour
1 teaspoon salt
1/2 teaspoon pepper
4 tablespoons butter
8 ounces sliced fresh mushrooms
1/3 cup sliced almonds
1/2 cup diced onion
2 cloves garlic, minced
3 stalks celery, diced
2 cups heavy cream
Additional salt and pepper, to taste

Steps:

  • Preheat oven to 350 degrees. In a shallow dish, combine 1/2 cup flour, salt and pepper. Heat butter in a large skillet over medium heat.
  • Dredge chicken in flour then add to skillet. Cook for 3-5 minutes per side, or until golden brown. Place chicken in a lightly greased, 9x13 inch baking dish.
  • Saute mushrooms, almonds, onions, garlic and celery in same skillet. Pour over chicken. In a medium bowl, whisk together cream, 1 tablespoon flour, and salt and pepper, to taste. Pour over chicken and vegetables in pan.
  • Bake, uncovered, for 30-40 minutes, or until chicken is cooked through.
