Children love anything breadcrumbed and simple schnitzels won't disappoint

2 eggs , beaten
handful sage leaves, finely chopped
140g dried breadcrumbs
8 boneless pork chops , fat trimmed
4 tbsp butter , melted

Steps:

  • Tip the sage leaves and breadcrumbs onto a plate, then mix together with a little seasoning. Pour the eggs onto another plate. Pat the pork dry, then coat each chop in the egg mixture, letting any excess drip away. Then dip in the breadcrumbs until well covered. Cook or wrap in cling film or freezer bags and freeze.
  • To cook, defrost completely if frozen. Place the chops on a lightly greased baking sheet and brush with a little of the butter. Cook under a medium grill for 7-10 mins until browned. Then turn over, brush with more butter and cook for a further 7 mins until crisp, browned all over and cooked through. Serve with green beans, fresh peas and some mashed potato mixed with grated cheddar.

Number Of Ingredients 1

  • 6 Ontario boneless pork loin center chops, about 1-inch thick
  • Salt and fresh cracked black pepper
  • 1½ cups (343 ml) panko bread crumbs
  • 2 tsp (30 ml) Italian seasoning
  • ½ cup (118 ml) all-purpose flour
  • 2 large eggs
  • Canola oil, for frying
  • 6 ciabatta buns or brioche burger buns (optional)
  • Horseradish mustard or Dijon mustard

Delicious options for sides: Sauerkraut, Mashed Potatoes, Corn on the Cob, Pickles

Steps:

    1. On a cutting board, using a very sharp knife, butterfly the pork chops; making sure not to cut all the way through. Open chops and place between two pieces of parchment paper or plastic wrap and pound with a meat mallet until  between 1/16 to 1/4-inch thick (depending on your preference). Season both sides of chops with salt and pepper.
    2. In a shallow bowl whisk together panko and Italian seasoning. In another shallow bowl pour flour. In the last shallow bowl beat eggs. 
    3. Place a wire cooling rack over a baking sheet. One at a time dredge both sides of the pork chop in flour then dip into egg mixture, letting any excess drip off before placing in panko. Make sure both sides are completely covered in bread crumbs before placing breaded chop on wire rack. Repeat process with remaining chops.
    4. To a large skillet, add enough oil to sufficiently cover the bottom of the pan. Heat over medium-high. Once oil is hot, add breaded chops; working in batches of 2-3. Cook 3-4 minutes per side, or until chop is golden brown and crispy. Remove to a paper towel-lined plate. Immediately season with salt. 
    5. Serve over mashed potatoes topped with sauerkraut, mustard, and a side of corn.

  • Line a cutting board with plastic wrap and place 1 pork chop on top. Cover with another piece of plastic wrap. Pound the meat with a meat mallet or rolling pin, until 1/4" to 1/8" thick. Transfer the meat to a plate, and repeat with the remaining pork chops, reusing the plastic wrap if possible. Take out 3 shallow bowls or baking dishes. Place the flour in 1 dish; the egg, garlic powder, and salt in another; and the panko in the last dish. Beat the egg with a fork until well combined. In a large, high-sided skillet over medium-high heat, heat about ¼" of vegetable oil. Meanwhile, working with 1 cutlet at a time, coat the pork in flour, then in egg, and finally in the panko. Use your fingers to press the cutlet into the breadcrumbs. Once the oil is shimmering, transfer 1 cutlet into the hot oil and fry for about 2 minutes on each side until golden brown. Reduce the heat if the cutlets are browning too quickly or unevenly. Transfer the cutlet to a plate lined with paper towels. Adding more oil as necessary, continuing frying all the cutlets. Serve with lemon wedges.
